Most southerners use add only salt to the water to cook them. Using the Old Bay would give you cajun spices and might be hot. Just make sure DH like hot spicy before you use that. And, you don't have to cook them until they are mushy! That's why you check them all along.
Thanks FFG! I'm not cooking them, he is, outside on a gas burner! He had only planned to add salt, but someone told him 1C per gallon of water I think that is a LOT of salt!
I have only done them once and that was over 20 yrs. ago when we first moved down here. Maybe I boiled them too long but mine were mushy. I still don't like the flavor doing them that way. I'm not a big peanut fan anyway but I sure like me some pecans, english walnuts & almonds!

Oh, my gracious!!! 1 cup to 1 gallon?????? Those puppies would float like a balloon in BRINE like that!!!!! That's far too much. I'd probably start with 1 tablespoon of salt, but that might not be quite enough. It does take practice to get them right every time.
