CA Lori, I think most potlucks end up a little too heavy with salads, sides and desserts - take my main course entree of Red Wine Pork Roast. Make it at home the day before, slice thinly (retaining the juices) if you can take it in a microwavable container with access to a microwave to heat it up just before serving ~ it will be a hit! I think what to bring depends on whether you have access to an oven or not. And if there is enough outlets (and juice -- you don't want to be blowing fuses) to plug in a crock pot.
If not, that does limit one to salads or desserts IMO and since you ruled out desserts.
A very pretty and Christmasy salad is my Plan B salad which I've posted several times. A bag of broccoli crowns, a small container of grape or cherry tomatoes (cut them in half if you have the time) and a small bottle of your favorite Italian dressing. Taste and make sure you don't need additional salt and pepper, do it if you do but there should be plenty of salt in the dressing. Mix well and put in a pretty cut glass bowl.
When I take it somewhere, I never bring anything home. It can be served from the refrigerator but it is also good at room temp so wherever you're going you don't need to worry about refrigerator space (as you might with a jello salad say). So it's an offering that even hostesses like you to bring!
It's too bad the hostess didn't make suggestions on what to bring. A friend of mine just invited us to a holiday-themed potluck.
She's making the entrees and providing the beverages. The rest of the guests have their "assignments" which eliminates the guessing game and also ensures a balanced meal. I get to bring a festive fruit salad. Yay!
A good idea for a potluck dish that can serve as a light entree/appetizer is a quiche, with or without meat. It can be served room temperature. One 9" quiche could serve about 8 folks.
You can always buy a frozen, ready-to-bake quiche, if time and energy are in short supply. Nancy's brand is fabulous and rivals from-scratch versions.
Would you believe it, nobody brought a dessert! Luckily, the club had purchased some (like we really needed it :rolleyes. I wound up making a Lasagne recipe that I got online. It got a rave notice from one of the fussy Italian "sons" in our club who is very picky about his sauce! It was a lot of work though, and it cost me $37 :rolleyes (thanks to IdahoResident, I'm getting these emoticons to work now)
