Ok, so my girlfriend first made this for me and it is delicious. Thought I'd share it and hope to get some great side dish ideas from you. :-)

Fried Tomatoes with Spices and Mozzarella Cheese

Not sure what it is called but basically, fried tomatoes with a fair amount of evoo, lots of different spices (pick the ones you like).

Fry the tomatoes w/spices for a bit them add fresh pieces of mozzarella cheese until they melt a little and you're done. My girlfriend then broiled hers but I'm not into broiling so I've just skipped that step.

For variations, you can fry onions with them, too, and I sometimes like to add pepperoni to the pan before I put in the mozzarella. I accidently had some pasta on my plate once with the tomatoes and they mingled. Oh, it was so good I had a second helping of each and intentionally mixed them together. Yum!

Love tomatoes and mozzarella with anything and everything.

Caprese salad (fresh tomatoes, fresh mozzarella, basil, EVOO and balsamic or Spanish sherry vinegar) is my go-to side dish.

I love steaming fresh broccoli and tossing it with EVOO, sherry vinegar, golden raisins and pine nuts -- garlic optional.

A favorite side dish is rice pilaf: saute broken pieces of thin spaghetti (or orzo pasta) in butter until golden brown; then add raw rice and stir to coat. Add rich chicken stock (2 c. to 1 c. rice) and bring to a boil. Immediately reduce the heat to the lowest setting, cover with a tight lid and cook for 20 minutes.
Fluff with a fork. Toss cooked rice with chopped parsley and chopped scallions just before serving.

Florida Farm Girl, yes. My friend actually made them with grape tomatoes. I've used grape tomatoes or simply cut a "regular" tomatoe into chunks.

These sound so yummy ladies, and just might be a good ticket away from my fresh salads, which I usually add cold roasted meat to in this Aussie heat...too hot to cook...I love tomatoes any way I can get them!

That brocolli sounds delish!

Hope you are not being affected too much by the wildfires.

I heard it was 129 degrees in Aust and they added another color for it on their weather maps!
