Prepare Ahead Dishes Sign In/Join

I have a problem. We are to attend a family reunion on a Saturday and I will be out of town the Thur. and Fri. preceeding it. I can't think of any side dish that could be made on Wednesday or made ahead and frozen. Due to the distance we travel, it isn't practical/safe to take hot dishes.

I plan to make a chocolate pound cake and freeze that.

I would be very grateful for any ideas and suggestions.

Thanks.

What about a 3 bean type salad with oil & vinegar dressing? Or a sauerkraut or pasta salad with a vinegar and oil dressing. Could keep chilled in a cooler with ice. Chocolate pound cake sounds delicious.

Cassia, thank you. That is a good idea. Don't know what time I will be geting home on Friday evening, so a three bean salad would be easy to put together. Keepng dishes cold is not a problem. Folks that live closer can bring the hot dishes.

Thanks again.

Any pasta or vinaigrette salad could be made on Tuesday or Wednesday and be fine for the weekend.

There is oil and vinegar coleslaw, any vegetable salad with vinaigrette, or the layered lettuce salad (think they call it 7 layer salad) that is topped with mayo. Some could be done on Tuesday or Wednesday while others could be assembled before you leave for your event.

An easy one that I've posted before -- Plan B Salad -- broccoli crowns cut in bite size pieces, cherry tomatoes halved and a bottle of Italian type dressing poured over. Couldn't be simpler and I often just buy the packages that have the crowns (some you may have to cut but you often don't) and then I'm lazy and don't halve the cherry tomatoes. It will work if you don't halve them!

If it were me, I'd probably just do a regular green salad. To make it easy, buy the bagged salad, some pre-cut veggies to add, a couple of dressings and whatever toppings.
