What are you cooking for Christmas Dinner (or are you a guest and are your bringing anything?) And is your entertaining on Christmas Day or Christmas Eve or the weekend before or after? We've always had a simple family time on Christmas Eve and have cookies and fruitcake and egg nog after the c h u r c h s e r v i c e o f c a r o l s and candles. On Christmas Day, we don't do breakfast but instead have a stollen or kringle on the sideboard to munch on. Dinner for us this year we will start with that roasted pear salad, then have a pork loin, Emeril's andouille sausage and cornbread dressing, roasted brussels sprouts and a pear tart. We'll have tea that afternoon -- mince tarts, fruitcake, cookies. If we're still hungry that evening, we'll make sandwiches out of leftover pork loin. Martha | |||

We are going to postpone our "Christmas" dinner to Thursday. They are calling for snow tomorrow and friends may not be able to get home as they don't plow the road up their mountain. So we will laze around, roast for dinner with I-haven't-decided-yet. And have our ham on Thursday. Your things sound wonderful, Martha, as usual. | ||||

Swedish meatballs - it is just the two of us and the kitchen is (finally) put together. I'm cooking a pork roast and sprouts tonight using the new convection oven Santa delivered, and DH is making a fruit cake. | ||||

Big breakfast - grits casserole (cooling to go in refrigerator) egg casserole, sausage, bacon, biscuits, fresh fruit, mimosas for us and Sister and her husband. Then tomorrow night -soup and sandwiches. | ||||

On my own, made meatloaf, baked potato, and green peas for dinner tonight. Have a small pork roast defrosting in the fridge that I will stuff and roast tomorrow after I get home from seeing Les Mis. | ||||

I'm on a 10 min break before I head back to kitchen. Have DS, DIL & 2 grands visiting for a week. Went to beach this am, at 4:00 had 6 friends in for cocktails and grazed thru appetizers- meat balls, shrimp, chili cheese dip, chips and salsa and Irish cheese with fruit. While we were having our happy hours, I cooked the turkey. Friends have left and now I'm making an egg casserole and coffee cake for tomorrow am after all gifts are opened. Dinner will be turkey, cornbread stuffing, corn casserole , mashed potatoes and gravy, sometime around 4:30. Dessert is in freezer and salad molding in refrig. I will take turkey off carcass shortly and refrigerate until tomorrow. I've done non stop cooking and baking the past 10 days. When family leaves Wed., my kitchen will be closed and the cook on strike until at least the 31st. Merry Christmas to all out there. | ||||

Everyones breakfast and dinners sounds wonderful.I like haveing evening party dinners.But today we had 1pm dinner.#1 DD,hubby & 2 kids came over.Honey baked ham,deviled eggs,rolls and DD brought crockpot macNcheese.Just a little simple but enough.Then we went over my parents and came home to leftovers.Freezing ham for this weekend. Tomorrow morning DH & I are treking to his family in NC(5 hr.drive).We'll have ham rolls for breakfast.We'll get there around 2pm.Have whatever is leftover.Just enjoy being with them for the night.Then driving 2 more hours on Wed. to stay with DH brother & family for a few days. | ||||

We are getting a slight snow dusting now. Hoping it will be clear tomorrow as my ailing mom won't come out if it isn't. After months of getting her well, I'm hoping she can make it here. Unfortunately my DH's mom is in the hospital. Please send Christmas prayers her way. My twin DDs came today and will spend 2 days here. Tomorrow am we will start with Paula Deans breakfast casserole that I make with Challah bread and breakfast sausage. That bakes while we open presents. Works out great! Then probably around 2pm we will have our meal. Lasagna with meatballs, sausage and pork. Glazed ham with mashed pot. & string beans. Green salad & rolls. Dessert: custard, apple crumb, razzleberry pie. Creme brulee, Christmas cookies, and Rachel Rays chocolate pot o crems. Coffee, hot chocolate. Hoping my sisters come by with their kids for dessert. | ||||

Very simple here...just DH & I. We will be doing our "make your own sub sandwiches"! I have turkey, roast bf, pastrami, salami, sugar cured ham, pepperoni as meat choices and sharp cheddar & provolone cheeses. I'll do a tray with toppings...tomatoes, bell peppers, onions & lettuce...mayo or mustard also. I have kettle cooked regular chips & jalapeno kettle cooked! A pecan pie will go in the oven first thing in the morning. We decided we would have bacon/egg/cheese biscuits for breakfast. I have company Christmas Eve - I had baked ham, roasted turkey breast, thighs & wings, stuffing, broccoli, sweet potato casserole, veggie tray, bowls of fresh fruit and dried fruit & nuts - and all kinds of cookies and candies and Xmas bread. Served eggnog with rum or brandy. Then, tomorrow we go to our son's and I will bring broccoli casserole & twice-baked potato casserole and cookies. Seaborne | ||||

Just DH and I here for Christmas Eve SO we splurged ~ jumbo lobster tails with lemon butter sauce and baked Idaho Russet potatoes - the REAL thing - with the works! Tomarrow heading over to niece's (DH's side of the family) and making a Strawberry Spinach Salad ~ yes, the same one I posted about earlier! DH found some fresh strawberries in Idaho in December ~ good man, there, and he got all of the outside lights working tonight! Just in time for my parent's Santa Claus (he turned 71 years old this year and would have hated to miss his first year ever) to light up his wagon and take off for deliveries. Just DH and me here, too. Last night I fixed one of his favorite meals -- stuffed green peppers, mashed potatoes and green beans. Then pineapple upside down cake for dessert. He was amazed and asked what he did to deserve all that. His mom used to make the stuffed peppers for him, so it was a reminder of her. Today, the plan is for a turkey breast, cornbread dressing and veggies of some sort, and cranberry sauce, too. We'll still be having the pineapple cake for dessert!! Just the two of us on this special day: For breakfast, our annual treat of Italian panettone. Bought some Spanish fig jam for the occasion. Dinner: My Mom's recipe for shrimp creole, made with fresh Gulf-caught jumbo shrimp, and basmati rice pilaf. Plus broccoli sauteed in garlic and oil. DH bought me a gorgeous ceramic jug of imported Italian EVOO, so we are going to have a tasting with ciabbata bread, beforehand. Dessert: Homemade Christmas cookies from my next door neighbor. | ||||

We spent the day yesterday with stepson and family and more family that afternoon. The kitchen counter was spread with finger foods. Today it's just DH and me...grilled cheese sandwiches for lunch...cooking ground beef and rice dish for supper. I'm cooking Christmas dinner Saturday while my son is in to visit...ham, turkey, cornbread dressing, a traditional side or two and a couple of non-traditionals. Requested desserts are buttermilk pie and oatmeal cookies. I'm also baking my version of Ozark Mountain Pie and serving fruitcake along with some peanut brittle, peanut patties, and chocolate covered peanuts. (Yes we have a local peanut roaster/distributor!! I served a New England boiled dinner. We started with a sauteed shrimp appetizer concocted by myself and my daughter's boyfriend. As was suggested on another thread, I made an Irish soda bread which turned out great, so thanks for the suggestion! My dsughter made a wonderful argula salad with home-grown orange sections and black olives. Her boyfriend made a lemon meringue pie with home-grown lemons. My mother brought pumpkin bars, coccoon cookies, maccaroons and some delicious little nutbread muffins--all made from scratch by her. We had egg nog, merlot, wassail, pinot grigio and iced tea to drink. The most pleasant surprise of the meal is how much we all loved the beets boiled on the side! (Fresh vegetables make all the difference!) Unfortunately, we had two plumbing disasters--one in my only bathroom on Christmas Eve ($197.00 to replace a $12.00 part!) and a broken pipe under the sink on Christmas Day while we were cooking. I didn't call a plumber until today for the kitchen. I just finished washing all the dishes, pots and pans a few minutes ago. But I have to say that we really didn't let the disasters get in our way. We had a great time anyway. | ||||

View Arkansas...their very own recipe and they would not share. But since I know how to bake a pie I came up with my version. Only I couldn't call it the same thing. we always have a roast beef..Sirloin tip. with both roast and mashed potatoes..gravy. Then we slice it thin and serve on several differnt kinds of rolls with cheeses and mustards. There are crudites, cheeses, olives, deviled eggs,pies, non alcoholic eggnog, cider and coffee.. we eat buffet style while watching Doctor Who reruns. Life is GOOD!! | ||||

We had a great Christmas dinner. Was invited over to our GD's for dinner. Her SO cooked a turkey (his first turkey)and a green bean casserol our GD did the mashed patatoes and her step mom did a sweet patatoe casserol and a ham. We did the rolls and the drink. Our big extended family gathered at one sister's house Christmas eve for chili and oyster stew. We have a family program, telling the Christmas story, and singing carols. I brought the dessert which was a huge platter of homemade Christmas cookies. Then Christmas day we all gathered at another sister's house and had a ham dinner with assorted salads, potato casserole, homemade rolls, and for dessert more homemade cookies and candies. For that dinner I brought a pasta/veggie salad. After dinner we play games, play with the little kids, have a wii rock band competition, and lounge around. For us Christmas is fun, casual, and usually pretty loud with a crowd of loved ones. Perfect. | ||||

Always happy to share my recipes. Eggnog Bavarian with Raspberry Sauce Serves 12 Eggnog Bavarian: 5 cups purchased Dairy Eggnog 1/3 cup sugar 3 envelopes Knox unflavored gelatin 6 Tablespoons cold water ½ teaspoon freshly grated nutmeg 2 cups heavy cream Raspberry Sauce: 2 – 10 ounce packages frozen raspberries, thawed 2 Tablespoons cornstarch 2 Tablespoons brandy 1. In small saucepan heat 1 cup eggnog to scalding. Stir in sugar. Set aside. 2. In 2 cup glass measure sprinkle gelatin over cold water, let rest about 10 minutes to soften the gelatin powder. 3. Stir softened gelatin into hot eggnog mixture. 4. Over low setting, heat and stir until gelatin is dissolved/melted. 5. Pour into large bowl; stir in remaining eggnog and nutmeg. 6. Chill until mixture is slightly thickened. 7. In a deep narrow mixing bowl whip cream until very thick. Fold into thickened eggnog. 8. Lightly oil an 8-cup mold. Spoon mixture into prepared mold or individual sherbet glasses or other dishes. Chill until set. 9. To serve, invert mold onto serving platter. Drizzle sauce over; reserving extra to pass. Raspberry Sauce: 1. Prepare raspberry sauce by draining raspberries into 2 cup glass measure (about 1 ½ cups.) Reserve juice. 2. Blend juice and cornstarch in medium saucepan until smooth. Heat to boiling, stirring constantly. 3. Boil and stir until thickened and clear. 4. Stir in raspberries and brandy and cool. I do not have a recipe for Ham & Cheese Frittata but will summarize it here. Use a skillet appropriate for the number of guests to be served: I used these amounts for 8 servings: 12 eggs, well beaten 2 cups finely diced ham 2 cups shredded Cheddar cheese I did this Christmas morning as DH had requested omelets for breakfast. However since there were 8 of us, I just made frittata instead. Heat small amount of oil or grease in bottom of flat skillet to just smoking hot over moderate heat. Pour in beaten eggs. Dig a hole and fill it as you would for an omelet until no liquid egg will run to edges & underneath when you tilt the pan. Sprinkle with diced ham or other cooked meat of your choice. Top with grated cheese. Reduce heat to low and let egg cook until all is set. If it is cooked underneath but some on top is still raw, place skillet in hot oven under broiler for a minute or two.
