Looking for a new way to use home-cooked or rotisserie leftovers as dinner. THX :-) "We are all here.....because we are not all there." | |||

I like to do a pot of chicken/homemade noodles, but my DH doesn't like noodles..of any kind. Chicken sandwiches, chicken salad...some folks make chicken tacos, chicken soup of some sort (veggies, rice, noodles). As a last resort at my house, it becomes cat food. My fave: Shredded cooked chicken with cold and spicy sesame/peanut noodles, garnished with chopped fresh cilantro, sliced English cucumbers and shredded raw carrots. | ||||

Good ol' Chicken Caesar Salad with romaine lettuce and sometimes fresh baby spinach mixed in. | ||||

Chicken vegetable soup with or without noodles or rice. A creamy casserole using the chicken and vegetables. But perhaps my favorite way is a cold chicken leg and a slice of bread. Martha | ||||

Nance, my recipe has evolved over the years, but you can use Mark Bittman's excellent recipe as a guideline: http://markbittman.com/cold-no...anut-or-sesame-sauce I like to use about 1-2 TBS of Chinese garlic and chili paste for extra heat and Hoisin sauce which gives depth and smokiness to the dish. I always use unhomogenized peanut butter and tahini sauce for extra richness. Blend the sauce in a food processor for best results. As soon as the noodles are cooked, rinsed with cold water and drained, I like to toss then with 1 or 2 tsp of dark sesame oil to keep them from clumping. I like linguine. Oh, and you can garnish the dish with julienned red pepper, shredded carrot, and cilantro and scallions in addition to the shredded chicken. This is a very forgiving dish, so feel free to experiment to get that elusive sweet, salty, smoky taste. And, good luck. | ||||

I love those rotisserie chickens at Sam's. Bought one Saturday. Last night I took a leftover breast and chopped it up. Browned some onions in EVOO and tossed in the chopped chicken with some fresh broccoli for a couple minutes and topped off a nice salad of baby greens with tomatoes. Chicken fried rice as a side dish - toss uncooked rice in butter and onion to brown a little - do not burn the onion. Add water, cook rice. When the rice is done add chopped up lefover cooked chicken. Toss to warm through. I've done this with leftover homemade chicken, store bought and KFC.
