As long as you don't overmix. Nothing makes meatloaf tough like too much handling or over combining the mixture.
I agree with Lurah. And I would rather wash hands than a mixer bowl and beater!
But then I think that the hands are the kitchen's best tool!

I read once that you should mix the meatloaf or meatballs with a fork until it holds together and then form for the recipe. The recipe said that over handling does make the recipe tough.
You don't beat it like egg whites just until combined.
I've had to mix meatloaf this way for several years due to repetitive stress injury to my wrists. I just don't overdo the mixing.
