My favorite quick and easy lunch treat is Chinese Salad. I always keep the ingredients on hand. For one person (DH doesn't like mayo anything), I use: 1 c thawed frozen baby shrimp 1/2 c thawed frozen peas 3/4 c. chow mein noodles (dry, in a can or pkg.) Chopped celery (eyeball it, a handful maybe) 2 chopped green onions Mayo (enough to combine) Salt and pepper, to taste. Especially in the summer, I like to keep diced orange, red and yellow peppers, cucumbers, tomatoes and onions on hand (each stored separately) for a quick confetti salad which is just a 1/4 cup or so of each item mixed together with a little mayo and salt and pepper. It's great along with a grilled chicken breast. It looks festive, so it makes a nice presentation when you have drop-in company. You could also use it on a salad sampler plate alongside chicken salad and fruit salad, served with a popover. | ||||

Martha, I usually eat lunch out and like one of our local seafood places. My typical lunch is a cup of lobster bisque and then a piece of blackened mahi on a salad. It's the perfect break in my day. There are lots of other choices too just in case I need a change like fish tacos or sandwiches. Fun thread! ~Like sands through the hourglass ~So are the days of our lives | ||||
