My favorite quick and easy lunch treat is Chinese Salad. I always keep the ingredients on hand. For one person (DH doesn't like mayo anything), I use:

1 c thawed frozen baby shrimp
1/2 c thawed frozen peas
3/4 c. chow mein noodles (dry, in a can or pkg.)
Chopped celery (eyeball it, a handful maybe)
2 chopped green onions
Mayo (enough to combine)
Salt and pepper, to taste.

You must eat this right after you add the noodles, because they're not good after they get mushy.

Especially in the summer, I like to keep diced orange, red and yellow peppers, cucumbers, tomatoes and onions on hand (each stored separately) for a quick confetti salad which is just a 1/4 cup or so of each item mixed together with a little mayo and salt and pepper. It's great along with a grilled chicken breast. It looks festive, so it makes a nice presentation when you have drop-in company. You could also use it on a salad sampler plate alongside chicken salad and fruit salad, served with a popover.

Martha,

I usually eat lunch out and like one of our local seafood places. My typical lunch is a cup of lobster bisque and then a piece of blackened mahi on a salad. It's the perfect break in my day.

There are lots of other choices too just in case I need a change like fish tacos or sandwiches.
