I'm giving pretty little tins of fudge for Christmas gifts, but one person doesn't eat chocolate. I've substituted other baking chips like white "chocolate", used maraschino cherry juice for part of the cream and fold in almonds & chopped candied or maraschino cherries to the Nestle/Carnation fudge recipe with good results.
This time think I will do butterscotch chips and pecans as my substitutes.

Wondering if anyone else has different recipes or flavor ideas to share.

If nothing else I could use the Maple Fudge Divinity - a strange name for what turns out like light brown fudge. Don't understand the "divinity" part of the name. It is put together totally different than the Nestle or See's Fudge recipes.

Then there was the "fudge" recipe that someone posted that was a package of white chocolate chips and a can of frosting mix. I made it for Valentines and it was quite good. I made cherry because I wanted something pink. I then cut it out with heart shaped cutters. Left enough "scraps" to make me happy!

Do a google and lots of fudge favors will pop up like maple, peanut butter, pumpkin, etc.

I have a tried and true pineapple fudge recipe, if you're interested. It's cooked, though, instead of just assembled.

My other favorite is Pumpkin fudge,fav is peanut butter.On my Facebook page,I've been seeing people post & pics of amazing recipes of desserts.I saw peppermint/candy cane fudge,mint(green)chc.fudge and oh so delicious anything cheese cake fudge.LOL....try looking on allrecipes.com,do a search for fudge.

if anyone has a Facebook page,look up The Christmas Spirit.That is where all kinds of recipes are.On this page was a Eggnog chese cake recipe too.ENJOY......
Just saw the Eggnog fudge.

2 cups granulated sugar
1/2 cup butter
3/4 cup dairy eggnog

10.5 ounces white chocolate bars, chopped into small pieces
1/2 tsp freshly grated nutmeg, plus a little more for the top of the fudge
One 7 ounce jar marshmallow creme
1 tsp rum extract

1. Line an 8 or 9-inch square pan with foil and let it hang over the sides. Butter the foil.

2. In a heavy, 3-quart saucepan combine sugar, butter and eggnog. Bring to a rolling boil, stirring constantly. Continue boiling 8 to 10 minutes over medium heat or until a candy thermometer reaches 234°F, stirring constantly to prevent scorching. Remove from heat.

3. Using a wooden spoon, work quickly to stir in chopped white chocolate and nutmeg until chocolate is melted and smooth. Stir in marshmallow creme and rum extract. Beat until well blended and then pour into prepared pan. Sprinkle a little freshly ground nutmeg on top. Let stand at room temperature until cooled. Refrigerate if you’d like to speed up the process.

4. When completely cool, cut into squares. Store in a covered container. recipe by recipegirl.com

FFG, I've made peanut butter fudge for years. I just use the marshmallow cream & add peanut butter chips instead of chocolate. Not hard, but it takes the PB chips longer to melt than chocolate chips....so a bit more stirring.

Found recipe for something called "butter fudge".... can dig it out if ya want. It is super creamy and just like NJ boardwalk fudge.

I have added orange zest,craisins and chopped pecans to white "chocolate" fudge. Got more compliments than any other I have made.

I've added dried cranberries and pecans to white chocolate bark (as well as boozy apricots) -- but didn't think about doing it with fudge! Duh!

rutnel, I don't know if you were talking to me, lol, but incase you were or if anyone else wants it, here is my mother in laws peanut butter fudge recipe, it's so creamy and SO delicious! Smile

Peanut Butter Fudge

2 Cups Sugar
1/2 tablespoon Light Karo Syrup
1 pinch Salt
3/4 C. water
1 C. Peanut Butter (creamy or crunchy) with 1 teaspoon Vanilla added

Cook and boil all ingredients except peanut butter and vanilla, until it spins a thread (on my candy thermometer it ends up being 228 degrees). Remove from heat and add peanut butter/vanilla, beat until well mixed and pour into pie plate and let it set up. The secret is getting your peanut butter in and mixed pretty quickly because it starts setting up pretty quick.

If you try it, let me know what you think. I think it's one of the best things I've EVER eaten! If anyone makes it, I hope you enjoy it! Smile
