Dinner tonight is comfort food--oven fried chicken, cornpudding and stewed tomatoes. We love this combination. Fills the belly and comforts the s o u l. What comforts you tonight?

They had stewing hens at the farmers market so , it got stewed today. I'll make the dumplings shortly and pop them in. then it'll be fried apples with a few ginger snaps crumpled on top in a bowl. DH will want some cream on his . Its rainy here in nc so this will be our comfort food tonight.

Sonny, that sounds so good. I never heard of fried apples with gingersnaps. Will have to try. I love gingersnaps.

we really like it owie, but that might be somewhat because i cant make pie crust lol. so I just fry up the applies with some pie seasoning and then crumble up the ginger snaps. we like it warm but cold is ok too or put the cooled applies on ice cram and then the snaps. I hope you like it.

We had pinto beans w/ham ,fried taters and cornbread.The left over bread will go in the freezer to use for dressing when I cook a hen.

ohhh baby, pintos cooked with a ham hock.. it just doesnt get any better than that, soaking up the pinto juice with cornbread.. I'm not hungry but that sure sounds good.

It all sounds good! Y'all covered fried chicken, pinto beans and cornbread, fried potatoes - home fries not French fries. The only thing I could add is a really good oven-baked roast with potatoes, carrots, and onions.

For the fun stuff: hot cocoa made from scratch with cocoa powder, sugar, etc. like my grandmother made. Something as simple as marshmallows really thrill me. MOF I've been thinking about them for a couple of days now.

Pinto beans for a small family:
Take 1/2 pound of pinto beans; sort through them checking for rocks and half bug-eaten beans. ;0) Wash what you keep. Put in a pan and cover with water an inch or two over the top of the beans. Bring to a boil. Turn burner off. Cover and let sit at least an hour...up to overnight. The longer you let them sit, the more sugar will leach out therefore reducing the amount of gas they cause. ;0( Before cooking, rinse well.

To cook on stovetop - Put beans in saucepan. Cover with water. Add 3 or 4 slices of bacon, some ham or ham bone, or bacon grease. Salt and pepper lightly to begin with. Cook 1 - 2 hours on low simmer. After you know the meat is cooked, taste the broth and adjust seasonings. Add water as necessary.

To cook in crockpot which is what I started doing when I worked outside the home - Put beans in crockpot and cover with water. Add same meat/grease seasonings as above. Cook on low until last hour - around the 7th hour. Stir, check seasonings, turn on high and cook for one more hour.

When we have ham, I don't pick all the meat off the bone. I wrap it meat and all and freeze it. When I'm ready to cook pintos, thaw the bone and plopped it in the pot when I start the beans. Before serving, I very carefully remove the bone from the pot and basically just shake the meat off. I separate meat from the bone, fat, and grissly stuff putting the meat back in the pot. When using a hambone, be careful with your salt...it is very easy to over salt the beans.

I'm eating my comfort food at lunch.

Mac-n-Cheese made in rice cooker. Was supposed to have leftover Borscht from last night, but there wasn't any leftover!

I keep macaroni on hand just for such occasions.

Tonight, we are having a new recipe: Pecan French Toast, along with bacon and canadian bacon.

Why serve two meats? Blame Cracker Barrel. That's one of the things I love about their breakfast meals: multiple meats. You don't get a LOT of each one, but it does give variety and I love it. So, I incorporated the idea.

Canadian bacon instead of ham, because it's much lower in fat AND comes precooked in small slices. Heat it and serve. Easy, though not always easy on the wallet.

I don't get pintos to often since my hubby doesn't like them....but boy are they good with stewed potatoes and cornbread. Comfort food for me is meatloaf, homemade mash potatoes, and green beans cooked with a ham hock. In fact our 17yr. daughter just requested I make it this week (can't wait...doing the happy dance) Big Grin SKM

Stewed potatoes?? Tell me about them. Never heard of them. Now we had stewed tomatoes last night. DH commented several times on how good they were. "Hum, we haven't had these for a long time". !! I love his comments.

My mother's chocolate cream pie. Or better yet, her German chocolate cake. Only, she doesn't bake any more. Even though I have her recipes...it's just not the same.

She also made a killer banana pudding! BTW, have you ever had it with drained crushed pineapple instead of bananas? Yum!

Can't forget fried cabbage!

I answerd the pinto bean question 'out-of-turn,' but will hold off on the stewed potatoes. I'll check back this evening and if SKM hasn't been back to tell how she does hers...I'll tell you how I do mine.
