Union Square Cafe is a popular Restaurant in NYC. Just made these today for snacking on Thanksgiving. They turned out good. I like very spicy foods but if you don't I would add the cayenne a little at a time, or leave it out altogether. 1/4 lb. unsalted mixed nuts 2 T. fresh rosemary chopped fine 1/2 t. cayenne pepper 2 t. dark brown sugar 2 t. kosher salt 1T. butter, melted Mix all together in a bowl. (I used clean hands) Lay out flat on a Parchment paper lined cookie sheet. Roast at 350 for 7 to 10 minutes | |||

Thanks SR. Where'd you find the recipe? Not familiar with that NYC restaurant tho DH and I were just in the city (before Sandy hit) for a day trip. I like spicy foods tho DH can't stomach them. I will make note of this because I LOVE NUTS too. You ARE what you eat you know? | ||||

Froo Froo, one of the episodes of The Best Thing I Ever Ate on the Food Network, these nuts were the best thing Giada ever ate. My husband likes spicy but his stomach doesn't so I made 1/2 spicy and 1/2 not! The rosemary makes them savory and the little hint of sugar and salt gives them that salty sweet combination. | ||||

I've made them quite a bit and I've used other nuts besides the mixed (i.e. just cashews or just pecans or just almonds). Any nut is good fixed this way -- love the sugar, hot and rosemary! Martha | ||||

SR, your post prompted me to search for other spicy nut recipes. I found several including a version of yours using different nuts. That being said, I'm trying to cut down on my sugar and salt intake. I do buy my nuts either low salt (still too much for my taste) or salt free or raw almonds. I may try using Truvia....my new best friend. | ||||
