Does anyone have any tasty pork roast recipes? My store had them on sale last week for .99 a pound. I just could not resist that kind of good buy.

Wish one of our stores would give us pork roast for .99 a lb. Favorite way to have one cooked is garlic salt and pepper all over and cook in oven. Cover with foil most of the way, then uncover to get the outside crispy. Now, I have to say, I've never cooked it like this. My late DH did 95% of the cooking, but I watched for 21 years. I think he cooked it on 350.

Then you can do so much with the meat. Slice it and eat it like that. Shred some of it with your favorite BBQ sauce. Slice some before cooking and cube it for stirfry.

I put mine in a cast iron pan after rinsing and patting dry. If it is a loin, I put a little butter in the pan too. If it is not a loin I don't add butter. I salt and pepper it, sprinkle caraway seed all over it, about a teaspoonful, and then sprinkle brown sugar all over it. I roast it in a 325 degree oven. I do not use a rack in the pan because I like all that dark sticky stuff to flavor my gravy. I make gravy with half milk and half water. That is the way my Grandma taught me and it is a little sweet but good and the gravy is usually nicely brown and very rich.

I add just a bit of seasoned meat tenderizer or seasoning salt, bake covered @ 400 for 1 hour, add 2 bags (or canned if you prefer) sauerkraut to it & continue baking on 300 for 3-4 hours...this is for a large roast, time will need adjusted for a smaller roast. Serve with hot buttered biscuits & mashed potatoes! There is nothing that tastes better than this! LOL


You can also add BBQ sauce instead of sauerkraut for BBQ Pork, Bake until just done, then shred it just before adding the BBQ sauce & bake until tender...served on hot rolls is great!

I make mine in the crockpot. I mix 1 can of jellied cranberry sauce, 1/2 cup cranapple juice, 1 tsp dried mustard,and 1/8 tsp cloves. Mix altogether. I brown the pork roast in a frying pan. Put the roast in the crockpot and pour the cranberry mixture on top. I use a meat thermometer and cook either on low or high until it reaches the correct temp on the thermometer.

I do it like a regular pot roast, in the crock pot. I put veggies (onion, carrots, potatoes) on the bottom, put the meat on top and then add a cup of broth or other liquid. Cook on low all day.

Here's my favorite pork roast recipe, it's in the crockpot, of course:

CROCKPOT APRICOT GLAZED PORK ROAST
1 can (10 1/2 oz.) Chicken Broth
1 jar (18 oz.) apricot preserves
1 large onion, chopped
2 tbs.. Dijon-style mustard
4 lb. boneless pork loin roast

MIX broth, preserves, onion and mustard in 3 1/2-qt. slow cooker. Cut pork to fit. Add to cooker. COVER and cook on LOW 8 to 9 hr.* or until done. Serves 8. *Or on HIGH 4 to 5 hr. For thicker sauce: Mix 2 tbs.. cornstarch and 2 tbs.. water until smooth. Remove pork from cooker. Stir cornstarch mixture into cooker. Cover and cook on HIGH 10 min. or until mixture boils and thickens. Serve with mashed potatoes.

I have kind of a special recipe that I got somewhere. Nice for company.

Butterfly the roast. Salt and pepper the middle. Line with roasted red peppers, goat cheese and basil. Roll up, tie to secure. I sear it off in a pan then cook, but you can just stick it in the oven. 375 until done, about an hour or so, depending on how big it is. Sometimes I make a nice sauce, but you don't have to. Looks beautiful when sliced. And it tastes good hot or cold.

Here's a pork recipe that my family loves!

Pork Medallions with Mango Salsa (serves 4)
1-1.5 lb. pork tenderloin
1 TBSP Amazing Taste for Pork Seasoning
1 mango, peeled, seeded and chopped
1/2 red bell pepper, chopped
1/4 cup finely chopped red onion
2 tbsp. chopped fresh cilantro or parsley
1/2 tsp. grated lime peel
2 tbsp. fresh lime juice
2 tbsp. olive oil

Cut pork into 1.5 inch thick slices. Flatten to 1 inch thick, and coat with Amazing Taste seasoning. In medium bowl, combine mango, bell pepper, onion and cilantro. In small bowl, combine lime peel, lime juice and olive oil. Toss half of the lime mixture gently into mango mixture and set aside. Cook pork medallions in pan with 1 tbsp. oil over medium heat, baste with remaining lime mixture. Cook until pork reaches internal temperatre of 155 degrees F., about 5 minutes per side. Serve with mango salsa.

For anyone who likes garlic this is good for any roast - pork, lamb, or beef. Just slice garlic cloves into slivers, stab the meat with a long thin knife and insert slivers of garlic. You can use a lot or less depending on taste. I usually do slits every 1 1/2 inches or so. Bake as usual til meat thermometer says it's cooked!

ETA - I often use pepper or Dash with roasts when cooking w/out a recipe. I don't use salt.

Sweet potatoes baked with the roast are really good and I always throw in lots of whole garlic cloves to bake as well.

joyluck, just talked with my dad and he said he does the same thing with pork roast, jabs slits in the meat and puts garlic in them. He then rubs olive oil all over the roast and puts it on the grill..I asked him for how long and he said" Until it's done." Roll Eyes He cooks it on medium low with the lid down, moving it off direct flame if necessary.

LOL, Melbourne, I shouldn't even ever post my "recipes" cause mostly I don't use any. I do the same with the olive oil, just never thot of it when I posted! I bake roasts in the oven, timing is different depending on whether I use the convection or regular.

Roasts done this way make great sandwiches also, the garlic flavor is very mild.

Pot Roast with Pepsi or Coke

3-4 lb. roast (I use a pork roast)
1 (12 ounce) can Pepsi or Coke
1 (10-3/4 ounce) can cream of mushroom soup
1 (1 ounce) package dry onion soup mix
1 teaspoon minced garlic (optional) I add it!


Place roast in a roasting pan that can be covered tightly.

Pour Pepsi or Coke over the roast.

In a bowl, mix soups and garlic together.
Spread evenly over the roast.

Cover tightly.

Bake for 3-4 hours at 325 degrees.

"ENJOY"!!!
