Hey chessie and welcome to the boards! What type cookie are you most interested in? My most requested cookie recipe isn't actually a cookie, its Peanut Butter Cups (its made in muffin cups) I take a standard PNB cookie recipe and bake in muffin cups, right before they are totally cooled I insert a mini Reese pnb cup in the center. My second most asked for is Peanut Butter Chocolate Cookies - I think I got the recipe from a Taste of Home mag. 1/2 cup butter, softened 1/2 cup sugar 1/2 cup packed brown sugar 1 cup creamy peanut butter, divided 1 egg, lightly beaten 1 teaspoon vanilla extract 1 1/2 cups all-purpose flour 1/2 cup baking cocoa 1/2 teaspoon baking soda 3/4 cup confectioners' sugar 1. In a large mixing bowl, cream butter, sugars and 1/4 cup peanut butter. Added egg and vanilla; mix well. Combine flour, cocoa and baking soda; add to creamed mixture and mix well. 2. Blend confectioners' sugar with remaining peanut butter until smooth. Roll into 24 balls, 1 in. each. Divide dough into 24 pieces; flatten each into a 3-in. circle. 3. Place one peanut butter ball on each circle; bring edges over to completely cover it. (Dough may crack; reshape cookies as needed.) Place cookies with seam side down on ungreased baking sheets. Flatten each cookie slightly with the bottom of a glass dipped in sugar. Bake at 375 degrees F for 7-9 minutes or until set

I am not the orginal poster but I am always in search of the ultimate soft sugar cookie. One that is rolled and tasty and soft. Anyone have a really good recipe for such a cookie?

Strike 2-
All I can say is your poor neighbor!! I had my upper & lower jaws broken, palete split & chin reconstructed all in one surgery. I was a mess. I did not eat meats or foods that required any steady chewing for 3 months after (no kidding). I was so scared I would ruin the surgery & have to have it done again..NO WAY!!! I will be thinking about her/him & wish the best for a speedy recovery.
Sorry no soft cookie recipe but there is a book, Dinner threw a straw that may provide your neighbor with some nutrition as that is super important to recovery!!!

I have not tried these: Soft Snickerdoodles 1 cup butter 1 1/2 cups sugar 2 large egg 2 3/4 cups flour 2 teaspoons cream of tartar 1 teaspoon baking soda 1/4 teaspoon salt 3 tablespoons sugar 3 teaspoons cinnamon Preheat oven to 350°. Mix butter, 1 1/2 cups sugar and eggs thoroughly in a large bowl. Combine flour, cream of tartar, baking soda and salt in a separate bowl. Blend dry ingredients into butter mixture. Chill dough, and chill an ungreased cookie sheet for about 10-15 minutes in the fridge. Meanwhile, mix 3 tablespoons sugar, and 3 teaspoons cinnamon in a small bowl. Scoop 1 inch globs of dough into the sugar/ cinnamon mixture. Coat by gently rolling balls of dough in the sugar mixture. Place on chilled ungreased cookie sheet, and bake 10 minutes. Remove from pan immediatley.

This is my mother-in-law's recipe: Snickerdoodles 1 cup shortening 1 1/2 cup sugar 2 eggs 1 teaspoon vanilla 2 3/4 cup flour 2 teaspoons cream of tartar 1 teaspoon soda 1/2 teaspoon salt 2 tablespoons granulated sugar 2 tablespoons cinnamon Mix shortening and sugar. Add eggs, vanilla, flour, cream of tartar, soda, and salt. Roll into balls the size of small walnuts. Mix 2 tablespoons sugar and cinnamon in a zipper bag. Drop dough balls in and gently shake. Bake at 400 degrees on an ungreased cookie sheet for 8-10 minutes. TTYL - Gotta go make a batch!

I love quick recipes and I hate to roll cookies but I found a no roll, super soft sugar cookie recipe on the back of the Gold Medal flour bag that I use all the time:
To Roll or Not to Roll Sugar Cookies
1 cup sugar 1 cup butter, softened 1 teaspoon vanilla 1/2 teaspoon almond extract 1 egg 2 1/3 cups Gold Medal unbleached, all purpose flour 1/2 teaspoon baking soda colored sugar or plain granulated sugar
Heat oven to 375.
For no-roll cookies: In large bowl, beat sugar and butter on low speed or with spoon until light and fluffy. Stir in vanilla, almond extract and egg. Stir in flour and baking soda. Shape dough by teaspoonfuls into balls. On ungreased cookie sheet, place 2 inches apart. Flatten with bottom of glass dipped in sugar. Bake 9-11 minutes or until set. Immediately remove from cookie sheet to cooling rack.
For rolled cutout cookies: Use 1 1/2 cups powdered sugar instead of 1 cup sugar. In large bowl, beat powdered sugar and butter on low speed or with spoon until light and fluffy. Stir in vanilla, almond extract and egg. Stir in flour and baking soda. Cover and refrigerate at least 2 hours. Divide dough in half. Roll each half 1/4 inch thick on lightly floured surface. Cut into desired seasonal shapes with 2- to 2 1/2 inch cookie cutters. If cookies will not be frosted, spinkle with sugar. On ungreased cookie sheet, place cutouts 2 inches apart. Bake 7 to 8 minutes or until edges are light brown. Immediately remove from cookie sheet to cooling rack.
Never tried the roll out ones but we love the easier version!

Paint&brush, hope you enjoy them. My 14 yo DS saw my recipe by the computer yesterday afternoon and made a batch! He made them a bit bigger than the recipe instructed so the edges got a little crisp while waiting for the centers to cook and they were wonderful that way!
