Michael Symon (The Chew) made Gumbo recently and I think I'm going to try it. I'm tired of the same old dinners all the time!
The recipe serves 12 and since there's only 2 of us, I thought that if it turns out to be a good dish, I could take the frozen leftovers to a Super Bowl party in Feb., where we've all been asked to bring something for a potluck.
There's only two of us too. I freeze gumbo all the time. Just be quick in the reheating and serving, especially if you have shrimp and okra in it. The shrimp will overcook and the okra will turn to mush.

It sure does. My story - I was overdue with our first baby, had that burst of energy on Saturday afternoon. Made it for supper, makes a huge panful, put the rest in the freezer. DS1 was born the next day and I had company for supper a few weeks later and served it again . The dinner guests had been to the same cooking school as I in New Orleans so she was familiar with the recipe and complimented me on why mine was better than hers!This message has been edited. Grew up eating Gumbo....Most people make it in HUGE pots so there's always a lot left to freeze! It's soooo yummy when it's cold outside.
