Toppings for Cheesecake Sign In/Join

Hi We are hosting a New Years eve party, and want to make cheesecake. My plan is to make a plain cheesecake and have several toppings. I will do blueberry, cherry, and would like help on making one with Cream De Menthe and Bailey's.
Will also have a chocolate topping.
Please give me suggestions.

I bake a New York style cheesecake and at first did serve toppings on the side. My family and friends like my cheesecake as a stand-alone...nothing else needed. Wink

Simply look up cheese cake recipes. Carmel came to mind. I'll see if I can find some.

I love this:

Turtle Cheesecake

2 cups vanilla wafer crumbs
6 tablespoons unsalted butter
14 oz individually wrapped caramels, unwrapped
5 oz can evaporated milk
1 cup chopped pecans
3 (8 ounce) packages cream cheese, rm tempt
1/2 cup white sugar
1 1/2 teaspoons vanilla extract
2 eggs
1/2 cup semisweet chocolate chips

Butter 9” springform pan.
Toast the pecans at 350 deg for 6 minutes. set aside.
In a small saucepan, melt the unsalted butter.
Combine vanilla wafer crumbs with the melted butter then press into the bottom of the prepared springform pan.
Place the pan onto a cookie sheet and bake for 10 minutes
Remove and cool.
Melt the caramels in the evaporated milk. Stir until smooth.
Pour over the cooled crust.
Sprinkle the nuts over the top.
Combine the cheese thru vanilla; beat til smooth
Add the eggs, one at a time and beat until smooth.
Melt the chocolate chips and mix into the cheese mixture.
Pour the batter over the caramel layer.
Bake 40 minutes or until barely set. Chill over night in the fridg.

notes:
- Build up the sides of the crust and only pour the caramel close to the edge, but not all the way to the edge or carmel build up very hard.
allow the caramel to cool before pouring the cheese mixture on top of it
- Spray the bottom of the pan with cooking spray, put parchment paper on top of that, then spray the paper. Or it might stick to the bottom.
- Also, just nuke the caramels with evaporated milk. Same for chocolate chips.
Much easier, faster & less messy.

That sounds like a terrific treat!
I would cut those cheesecake slices thin, so people could try the various toppings on different pieces.

My personal "favorite" has and will always be cherry. Something about combining the tart and sweet together.
