  canned/fresh/frozen... veggie dislikes??

Can't remember a lot of c anned veggies growing up. Mostly fresh or frozen.

There are some veggies that people "hate"... and I think cuz they've always had canned?? Peas, asparagus, mushrooms, etc. These 3 alone i canned form do not even remotely resemble fresh or frozen.

If you've only had pizzeria canned mushrooms, you can't possibly begin to enjoy REAL fresh cooked ot even raw ones.

A little OT, but veggies ya NEVER find canned?!? Broccoli, cabbage (except for kraut), brussel sprouts.
Can only think of ONE canned veggie that actually tastes like fresh... beets.

I do not like cauliflower, asparagus or greens (turnip, mustard, spinach) in any shape or form. Late DH could cook canned green beans and make you think they were made from fresh - of course, he made them "southern" style where he cooked them a couple of hours. I love broccoli, cabbage and brussel sprouts.

When I was a kid we always had canned vegs except for holidays. I didn't really start liking vegs until I was a teen and started eating at different peoples houses. I always make different vegs and my kids don't care for them but eat them.

We had a garden and a freezer so had fresh tasting vegetables year round. As the freezer was depleted, we got a lot of canned green beans, corn, and hominy as well as store-bought frozen Brussels sprouts. Later on, we started getting broccoli, but not much...only when DD the truckdriver was gone. ;0)

Let's see, I really like canned commercial green beans but don't like them either fresh or frozen - just something about the texture.

Spinach - love, love, love fresh spinach but it can be expensive if you don't grow it yourself so can't always have it fresh; frozen will do but canned, no way!

Peas - I don't like in any shape or form; I will (reluctantly) eat frozen ones but really don't like them either canned or fresh!

Corn - Like fresh on the cob; you can keep all of the rest!

Brocculi and Califlower - best fresh but frozen is good; agree that I've never seen it canned.

Beets - best all-around vegetable whether fresh, frozen or canned.

After posting this, I realized that I need to put the often forgotten lowly Beet to the top of my grocery list next week! Big Grin

Most veggies have low acid content - they can't be canned at home without a pressure cooker. Some can't be canned at all, either due to low acid content or the ability to withstand pressure cooking. Kraut is pickled, and therefore full of salt, sugar and vinegar, all of which will deter bacteria growth. Grandma gardened and always froze her veggies - she said that it was easier than pressure cooking them, and she also said that home canned veggies needed to be boiled at a "rolling boil" for at least 10 minutes prior to serving to make sure that all of the bacteria had been destroyed.

Personally I like the new Green Giant blends - They come in a microwave-safe steam package which make for quick and healthy lunch at the office. Yesterday I had the "digestive health" blend with white beans, spinach and yellow carrots. Today I had the "healthy vision" blend with carrots, string beans and squash with a rosemary-butter sauce. There is also a "healthy weight" blend with soybeans, black beans and carrots and an "immunity booster" blend with broccoli and red pepper.
