CA LoriWhat do you put in your turkey soup?
I got the stock made today from yesterday's turkey carcass and plan to add the veggies/noodles sometime this weekend. I'm interested to hear how you make your soup. My friend said she always adds an apple to her soup. I had never heard of that before.

SeaborneChopped up onion, celery, carrots - brown in oil - add stock/broth, turkey bones, simmer for an hour or two - then add barley - I cook barley separately - remove bones - chop up the turkey meat. Add to the soup - and serve.

LinderhofTwo different kinds of soup -- a simple soup of chicken brown, roasted onion, celery, carrots, chunks of turkey and rice. The other soup has the leftovers in it -- in addition to celery, onion and carrots, if there is a smidge of green beans, the last of the dressing, etc.
Both are good and get us through the weekend.

flboyA handful of everything in the freezer as veggies, chicken or tukey base, celery, carrots, peas,Taste and always add cooked turkey last. I laso cook up thin spaghetti and cut into bite size bits and add last with turkey.You need some good flavor so if you have a soup starter in the house start with that.

RicearoniLori - I do just as the others here suggest for the basic recipe. I will also include 1 cup of broken pasta or wild rice, as well.

CJOWe like noodles in ours (leftovers from Thanksgiving meal usually) and a half bag of frozen/mixed veggies.
Green salad and warm bread complete the meal

beedeeessWe always make as much gravy as we can when we cook our turkey because all leftover turkey gravy goes into the strained turkey broth with medium noodles - add turkey.
We cook turkey leftovers in water with onions, celery, carrots and a teaspoon of poultry seasoning. After boiling, strain and when cooled pick off turkey.
