Though I usually make my own, on occasion I buy those pre-rolled crust. If you are making a one crust pie what do you do with the other crust? Any interesting ideas?

i would just make 2 pies, or one pie and some individual tarts.

You can also just use one and refrigerate or freeze the other for another occasion.

I freeze the extra.

If your store sells the premade frozen Marie Calenders - they are hard to beat.

Spread butter on it...sprinkle with cinnamon sugar...roll up...slice...bake...watch closely because they will overcook and burn...maybe 10 minutes, I forget...

This reminds me of something my mother used to make with leftover pie dough except she didn't roll it up. She just collected all the snibbles in a ball, rolled it out flat again, crimped the edges a tiny bit to make a rim, then sprinkled in sugar, and enough (condensed?) milk to make a paste of the sugar. Then baked it in the oven with the pies (or after they were finished?) till the crust was lightly browned and the sugar/milk mixture a sweet, gooey treat. She called it "Grandmother Pie".

Actually, I make about 7 pies for Thanksgiving, so I don't usually have leftover pie crust dough. But if I did, I would roll it out, all ready to go, and wrap it good and pop it in the freezer for another day. Pie crust freezes well.

i just save it for the next time (and there is always a next time that comes soon) If next time is going to be a long time away --you can freeze it.

Thanks for the suggestions. Just 2 of us this year so no extra pies. Think I'll try something with the sugar, cinnamon.

You could always make another pie and take it to a shelter to contribute to their holiday dinner. What better way to give thanks.

Hang onto that crust! Keep it in the refrigerator and after Thanksgiving make a turkey pot pie!! Smile
