We went to our local Sticky Ribs rest. and if you ordered a rack of ribs, you got a free container with pulled pork. I'd say there's about 2 cups worth, maybe 3.
All I've ever had are pulled pork sandwiches. Is there something I could fix for dinner tonight besides sandwiches?
Just about anything you would use browned ground beef would be good with pulled pork.
If you have any bell peppers in the house stuff them with rice or quinoa and pulled pork and bake.
Enchiladas with pulled pork as the meat.
Tacos with pulled pork as the meat.
Put some on top of macaroni and cheese and, or mix it in. My mom use to make mac and cheese with bacon mixed in and a few slices of bacon on top. She also added a can of cream of tomato soup. It was one of her "I want to make something easy to cook tonight" meals.
Mashed or baked potatoes top with pulled pork.
An omelet or scrambled eggs with pulled pork.
There are probably a lot of other ways to use it but that is what popped into my head because I'm feeling lazy.
Pork is one of the most versatile proteins around ~ and since it was already BBQd and pulled ~ there is nothing you need to do except add it to something else
In addition to the suggestions above, my top three choices would be omelets, vegetable/barley soup and/or a casserole. Think we all have an old tuna casserole recipe (that we haven't made for ages) so just substitute the pork for the tune and be sure to add crushed potato chips on the top during the last 10 minutes of baking for that crispy crunch! It is so funny and odd to me to read all these "recipe" suggestions for barbecue. Coming from NC - the home of pulled pork barbecue, I can't imagine putting it into something else.
We picked up 2 lbs of 'cue from our local barbecue place over the weekend. We traditional then I froze the 2nd lb for later use.

Charming, hub enjoys the homemade rolls for the pulled pork recipe he makes for us. However, without the bbq sauce, we have found the flavored pork works well in stir fry dishes. We've been getting healthier and it is one of our favorites.

Nah, certain flavor combinations just don't work for me. I am very traditional with my barbecue.
I think in NC is probably a misdemeanor to put anything but vinegar based (east coast), sweet tomato base (mountain) or even mustard based (southern near SC) sauce on barbecue. Any other ingredient or use is considered a crime.
Ask our Texas members about putting tomatoes and beans into chili.

Ditto here. It stands on it's own!
BBQ baked potatos. Top your baked potato with your favorite toppings and add the pork on top. BBQ joints around here are serving those.
One of our favorite places serves Larry's Special Salad- a big green salad with tomatoes, cheeses, relish and topped with BBQ and served with garlic toast.
the traditional sides to us are rice, fries, baked beans, potato salad, or slaw. Pork served on the plate or in a bun. I like fries or rice with mine and slaw is a must! If I try to have BBQ pork w/o slaw, it's like trying to eat french fries w/o ketchup!
I had some left over pulled pork from the slow cooker. so, I put it together with some onion & fried potatoes in the skillet. I then put them in some warmed burrito wraps. it came out so good that I think I'll do it again. it was originally an experiment to see if it would be good & it was. maybe next time I'll add in some veggies too. like maybe carrots & corn. I've done that before with ground beef or steak. now that's really good. try it for yourself.

I just "pulled" an entire port butt roast 3 days ago. I made it all into bbq. We had one meal then, not sandwiches, just pork bbq on it's own with potato salad & baked beans. We had it again tonight and the rest is in zip bags in the freezer for future meals. It's great for a quick meal when you don't have lots of time...make sandwiches & add fries or chips & pickles or salad. Also great if unexpected company shows up and you need to "throw together" something for lunch or an easy dinner.

Hnmm, I might try that with a variation - just the onions and some peppers. I have flour and corn tortillas left from dinner last night and that might be lunch today.
What still tryin said....LOL! There are so many ways to use it in a meal. I love that wonderful smoky flavor.

Too late, Patti, it's gone. I served it with rice and buttered corn, but I'm thinking I would have liked it better doing it Charming's way with the fried onions/potatoes.

It is amazing how far a pound of bbq will go. We used the last of our 1st pound for lunch yesterday - 3 meals for 2.
I did a variation on Cheryl's - I sauteed onions and peppers, added a vinegar base sauce to it and added the left over bbq. Then I served it with cole slaw (required under NC law) on flour tortillas. It was really good!
thanks for taking my suggestion & making it your way. I just finished off my last batch last week. this time I used left over chicken & rice along with the fried potatoes & pork. that was even better. just put it all together & put them in burrito shells. today I'm putting some beef steaks in the slow cooker for dinner.
