I'm in need of tasty recipes for pinwheel/wrap appetizers for a party in January. Would you mind sharing any tried-and-true recipes you have? | |||

The ones I make use flour tortillas, cream cheese and thinly sliced lunchmeat ( I usually use Carl Budding ). Spread a fairly thin layer of cream cheese on the tortilla, put a slice or 2 of the lunchmeat, roll up and slice. | ||||

With that cream cheese base, you can add anything! finely diced ham crumbled bacon minced onion chives minced chilis and seasonings too! I generally do crumbled bacon, minced green onion, minced chilies, and a dash of chili powder. I whip the cream cheese with a mixer, then stir in the other ingredients. I love making them with softened cream cheese, chopped chives and thinly sliced Nova lox. | ||||

2 pkg medium flour tortillas 2 8 oz pkg cream cheese 1/3 c Miracle Whip 2 tbls chopped green onions ¼ c black olives (optional) 1 ½ lbs deli sliced ham (sliced thin) 1 tsp Worchester Sauce (optional) Instructions: Combine the following: Cream cheese, Miracle Whip, onions, olives and Worchester Sauce. Spread: a thin layer of the above mixture on tortilla. Arrange: 1 full slice ham and 2 1/ 4 pieces of ham (so you will have 1 ½ slices of ham on the tortilla) over the cheese mixture. Tightly: roll up the tortilla and wrap it in plastic wrap. Place in the refrigerator overnight. Slice into ¾” pieces. | ||||

All the above sound good. I like these spinach ones: 2 (10 ounce) packages frozen chopped spinach, thawed drained & squeezed dry in paper towels 1 (8 ounce) package cream cheese, softened 1/2 cup mayonnaise 1/2 cup sour cream 1 envelope ranch dip mix 1 jar bacon bit (or to taste) 4 green onions, chopped 1 (8 count) package 10-inch flour tortillas Directions: 1 In medium mixing bowl, combine cream cheese, sour cream and mayonnaise. 2 Beat in dip mix. 3 Add green onion, bacon bits and spinach (broken up into small clumps). 4 Mix thoroughly. 5 Spread mixture onto tortillas, leaving a 1/2" space around edge. 6 Roll up each tortilla tightly, and wrap each in plastic wrap. 7 Chill for several hours or overnight. 8 To serve, cut off ends and cut into 1/2" slices. | ||||

Belated thanks to everyone for your great ideas. I made Mountainbeach's spinach pinwheels using spinach/herb tortillas that made them extra-pretty on the platter. Also made a Mexican version, because I thought the younger crowd would like the spiciness best. They fooled me. The spinach ones went first. Must have been the bacon... Thanks again! | ||||

Since I don't like sandwich meats, I hardly ever get the chance to put pinwheels on my plate. But I know I would like the three recipes above for spinach, lox, or bacon/chiles suggestions Sherry, how much cream cheese and bacon would I need for a pkg of eight 10" tortillas? aychihua, same question about your cream cheese and lox. Instead of the prepared bacon bits in MB's recipe, I used 3/4 of a pound of raw bacon that I finely sliced and fried crisp. It was ample for the 8 tortillas I filled. Also, I used 8 oz. of cream cheese in each recipe; but both called for sour cream, plus mayo in the spinach ones that would increase the volume of 'spread' used for filling. | ||||

CA Lori???? I don't know! LOL I start with an 8 ounce package of cream cheese and fry probably 4-6 slices of bacon. Add your other ingredients. Taste. Season if desired. Add more stuff if desired. I've got to make some of these Wednesday night for a Thursday lunch event. I'll let you know how many tortillas I use. I, too, would substitute real bacon for the bacon bits, which I'm not too fond of. Sherry, I'm good with your answer. I'll just buy an 8-oz cream cheese, add the other ingreds. until I think it's right and fill five tortillas. That'll give me enough to take to the Super Bowl party, where everyone's bringing something. Thanks. | ||||

Just a note. I noticed SQUARED tortillas (for lack of the correct word) at the grocery store the other day, specifically to make rollups. That would make it so much easier than those rounded edges. Here are the spinach wheels. The spinach tortillas come in a 6-count pack, so I used 2 plain ones for the extra filling. The color contrast looks pretty good on the platter. Not too bad for my first attempt at this, I guess. | ||||

The Mexican ones turned out more oval than round... LOL Where were those square tortillas when I went shopping!?! What a waste saver those would be. | ||||

nettiejay You did good! Love the spinach rollups. I use the ends for QC purposes (Quality Control). It's a hard job but somebody's gotta do it. Actually I'm making them this week for a Friends of the Library catering event for a women's civic club. The ends will be saved for us to snack on while the club ladies are eating. We plan things like that.
