Anyone have recipes that they like to use persimmons in?

I saved this recipe, but I haven't tried it yet. It got mixed reviews, so if you try it, I would probably make some of the additions that the reviewers suggest.

1st DH wanted a permsimmon pie. I took a sweet potato pie recipe and pretty much followed it.
First...
I washed the persimmons - the little wild ones around here.

(I keep trying to type permission instead...)

Fill a pot with water, drop the persimmons in til the skin split. Mash through a colander. I have a jelly making colander that is cone-shaped with a wooden smasher.

Discard the skin and seeds. Measure the pulp and follow the sweet potato pie recipe.

That being said...sweet potato pie is better and less trouble. Wink

Thanks, I found one for a steamed pudding. I have to wait until they get soft and then I will use them.
