Went shopping the other day, and the S.P were humongous, (too much for 1 person)
When I came home, I thought I should have bought a couple and cooked them up,and froze the leftovers.

Now my question is, if you freeze them, do you put the marg/butter in ( i also like mine mixed with cinnamon and sugar)and then freeze or just mash them and freeze, also thought of buying the can of sweet potato's and doing the same thing as they are already cooked.

So what would you gals do if you were me Smile

I make sweet pototo pies for the holidays. If I cook the sweet potatoes in advance, I just mash them up and stick them in the freezer. When I am ready to bake I thaw them out and make the custard. The custard filling is very sweet and spicy, so I don't add anything to the sweet potatoes. Many of my friends tell me that they don't like sweet potato pie, but I make the best pumpkin pie ever!

When the sweet potatoes are large, I bake them, then halve them and put them on a platter to be passed to serve. If it's just DH and I, I just put it on a plate, cut it in half and give myself one half.

Sometimes the larger ones are sweeter, we only use butter on them to eat.

Last year I decided to try freezing my sweet potato casserole for a later dinner. I was not happy with the results. Maybe just baking/boiling potatoes and then freezing would work. I'll have to try that next and see how it works.

My DH just bought a bushel from a man and they are so sweet. They are the little red ones
I just bake mine and put them in ziplocks bags and freeze them.
When i wount potato i take one out and let it thaw out and heat it up with butter cimimon

Here's an "over the top" sweet potato dish...sooo rich & good!

6-8 medium sweet potatoes
1 can coconut/pecan frosting
dash of vanilla (optional)
1 stick melted butter (optional BUT ya know, butter improves EVERYTHING!)

9 X 13 casserole dish sprayed w/ cooking spray
Oven temp: 400 deg.

Boil or bake the potatoes. When done, take off skins & mash. If using butter, mix it in now. (You can just use a spoon for the mixing, don't need an electric mixer.)
Then mix in the frosting; last, add vanilla, if using.

Spread into the casserole dish & bake about 15 minutes at 400 deg.

Enjoy!

eta: We always make this at Thanksgiving & Christmas; put it together the day before & refrigerate. Take out of fridge 30 or so minutes before baking.

Sweet Potato Pie (adapted from Grandma's copy of the Betty Croker Cookbook)

For 9" pies (makes 2 pies with some custard left over for snacking)

1 3/4 cup cooked, mashed sweet pototoes
1/2 teaspoon salt
1 3/4 cup milk (I prefer whole milk for cooking, but the 2% for drinking and lattes will do in a pinch)
3 eggs
2/3 cups brown sugar, packed (I prefer dark brown sugar)
2 tablespoons white sugar (can be omitted if you like your pie a little less sweet)
2 teaspoons pumpkin pie spice
1 tablespoon melted butter (I prefer real butter to margerine or oleo)

Preheat oven to 425*

Blend all ingrediants in a mixer until smooth. Pour into pie shells (I hire the doughboy to make my crusts - or - as DMIL loves to say - I cheat) Bake 45 - 55 minutes, or until a knife inserted 1 inch from the edge comes out clean. The center will look soft, but will set as the pie cools. The oven is hot, so watch the pies carefully toward the end to make sure that they don't burn. Serve slightly warm or cool with real whipped cream. Enjoy, then indulge in a second piece.

Bake any left over custard in a small corning ware dish or ramakin and serve with cookies - gingersnaps are nice.

My new fave is sweet potote fries ( and I don't like sweet potatoes!) Thi is from Paula Deen.

I prebaked a couple minutes in the microwave then sliced into fries.

I placed on a cookie sheet and drizzeled with olive and sprinkled with salt, pepper and garlic powder baked about 10 -15 minutes with the last couple with the broiler on.

They are great!

My dh loved them with his steak (Saturday is steak and fries day - lol!

Thanks for posting the sweet potato pie recipe nut-n-hunny. I've never baked one before and thinking of making my first one for Thanksgiving. Or maybe I should make a small experimental one as a test before the big day Big Grin.

Colleen, sure wish I had seen your recipe for sweet potato oven fries. I wanted to do that last night for my ham dinner, but I chicken out and just baked them like I always do.

Oooh,PeriParker, that is a neat twist on sweet potato casserole.

My grandparents were sweet potato farmers. We always had sweet potato pie and sweet potato casserole for Thanksgiving and Christmas. I like the kind of casserole that has the brown sugar and pecan topping.

Nut-n-hunny, your recipe looks great. I think I try it. I think Sweet Potato pie is way better than pumpkin pie.

Mine were farmers, Reb Fan & did grow some sweet potatoes...my grandmother made sweet potato pies & I have ALWAYS loved them! It just would not seem like a holiday dinner without SOME kind of sweet potatoes on the menu!

I have a friend & her hubby who both swore they "hate squash". Right after talking about that I brought out my pumpkin pie that I had for the evening's visit from them.

They ate it and the woman raved about how light it was and delicious--THEN I told her it was made with a pumpkin pie recipe but it was made with BUTTERNUT SQUASH!

I make a casserole of sweetpotato then after it's baked--it gets a crunchy topping of corn flakes, butter and pecans (cut up) and then back to 400'F oven for 10 mins. Everyone who thought they didn't like sweetpotatoes are now lovin' it!

ALSO--sweet potato fires are delicious.

AND I bake in the microwave sweet potatoes split in 1/2 and then drizzle NO TRANS FAT marg. over them and a tiny bit of maple syrup!

DELICIOUS--like dessert for supper!!

I like to cook my sweet potatoes and put butter
sugar ans pumpkin pie spice and mix up put in a pan or baking dish and put miniture marshmillon
on top and bake untill the maeshmillons are milted or brown.you can also put in raisen.

try using them in your roast insted of regular potatos. Just another use for them Big Grin I have a harvest dinner crock pot recipe that calls for sweet potatos
