I just made some from scratch. It looks great. Can't wait to try it. I have been hungry for some for quite awhile.

I love it too. The only problem is standing and stirring for an hour, so I don't mae it too often!

Husband and I both love tapioca pudding but I haven't found a perfect recipe yet.


There are crock pot recipes...pretty good...that don't have to be watched over.

has anyone made tapioca pudding from scratch using a double boiler? a recipe i googled said to still stir constantly using that method. guess the only benefit is not scorching the bottom of the pan.. but it is still labor intensive.

I did not use a double boiler but I did stir constantly--it was my exercise for today!!LOL I used the recipe on the box of tapioca that I bought. It said to soak the pearls overnight but I only soaked for about 5 hours. I took a taste a little while ago--it was yummy.

So far, I haven't found the old-fashioned large pearls. All that is stocked around here are the boxes of "minute" tapioca.

I've been looking for the large pearl, because they can be cooked in a crockpot. Also a rice cooker, but for either method, I'm not sure of how much stirring. But, certainly, it can't be constant.

For the minute tapica, you just stir until a full boil. Or do in the microwave for 10-12 minutes, stirring once every 3 minutes.

On the side of the Tapioca box is the recipe for the fluffy type and all you do is seperate the eggs and beat the egg whites with part of the sugar and fold in the egg whites when it comes to a boil and ready to cool. I also layer mine in serving dishes with strawberries and cool whip on top. You can also layer in the bowl you put all of the pudding into. It doesn't get as thick or sticky this way. I also love Grapenut pudding.

My store had both small and large pearls. I bought the small. I want to try the slowcooker method next. It was all gone when I came from work Sat. evening. Of course I took some along with me. It was delish.
