Some of you have already been posting some delicious food. I haven't cooked much out-of-the-norm so have had nothing to brag about. Then last week, I had a taste-numbing cold. How fun is that? I'd just as soon not eat if I can't taste it. Humphf. I could stand several weeks of that if it came with a decent weight loss! I'm better. Husband has the cold now. Frown However, he felt pretty decent today. So...since I had to cook them anyway...how about some Texas Gulf brown shrimp?

While I got the boil going, husband made a small batch of his red sauce. I had a small dab of homemade tartar sauce. I halved and sliced an avocado. Husband wondered how it would taste drizzled with his red sauce. GOOD! is how it tasted!

That looks really good. I just wish DH liked shellfish. It is a struggle to get him to eat shrimp and crab.

September has been such a busy month for me I've not really put much time or thought into meals. Sister and BIL came over Saturday and we cooked burgers on the grill. She's cooking ribs Saturday and I have to come up with something for for 6 of us on Sunday. I'm torn between a pork loin roast or pork barbecue on the grill.

It's a struggle to get my DH to eat anything other than shrimp! KYIS that dish looks absolutely scrumptious! Except that DH would not eat the avocado!

My thoughts for cooking are of desserts. REad a recipe for brownies that you use 9 eggs to make!

Also I know I have a recipe for eggs you bake in hollowed out special bread. Going to hunt that one down and maybe make for dinner.

BTW someone recently posted a recipe for apple dumplings (think it was from a blog) I have made them twice and they are very good.

So far, this thread is very fishy. Wink

Yesterday I bought some fresh baby shrimp to serve with pasta. I sauteed a minced shallot in EVOO and butter, then added at least 1 cup of cherry tomatoes, a splash of chicken stock, some chopped chives, s&p, and the shrimp. Once the sauce was cooked through, I combined it with the cooked angel hair pasta. Yum.

That's what I was thinking - the next best thing to a few good seasoned boiled shrimp would be shrimp sauteed in olive oil with garlic, make a sauce and pour over pasta. YUM!

I wouldn't struggle to get DH to eat shrimp or crab if he didn't like them. I would eat them ALL and serve him something like - liver! Save the good stuff for me. Wink

Right now, I've got Scones in the oven. There was a recipe in the Food Section of our local newspaper that I wanted to try.

On Sat., DD and I went to our local Harvest Festival where there was a booth selling scones and jars of clotted cream. I was able to get a taste sample of the clotted cream, thought it was good, so I bought a jar.

My scones are different this time. I'm using chocolate chips and nuts instead of fruit, since I didn't have any dried fruit in the house except raisins. I had used raisins in my last batch along with dried cherries--didn't care for it. I liked the apricot scones that I made the first time I made scones--they were delicious but a little bit too dry. I'm anxious to see if this recipe is less dry.

Waiting on some chicken thighs to roast in the oven. We'll have them with some broccoli-with-cheese and some candied carrots.

Baked some bran muffins from a restaurant's mix my boss gave me. THEY smell delicious!

This is a shrimp/olive oil/garlic/butter recipe hubby and I really like with angel hair pasta. Not so many fresh shrimp here in Montana but the frozen ones from Costco are pretty good. Smile

I did the big Sunday dinner for DH, DS and her husband, my nephew, his wife and my great niece. I found a nice pork loin and marinated it in ginger ale, soy sauce, honey, pepper sauce, cardomon, garlic and fresh ginger.

I cooked it on the gas grill. It came out very juicy and tender. I also had fresh Greek style green beans, potatoes au gratin, scratch biscuits. Sister brought pasta salad and Copper Penny salad. For desert I made a Chocolate cake with fudge frosting from scratch.

For the cake layers I used one of Marcel Desaulniers (Trellis Restaurant in Williamsburg and the creator of the Death by Chocolate desert) recipes.

I think I'm finished cooking for the month!

We've been vacationing and got home Friday -- and we were gone Sunday! I'm itching to get back in the kitchen tonight -- on the road there aren't many vegetables. Lettuce in salads and perhaps a few pieces of broccoli and cauliflower!

Tonight will be small steaks grilled along with zucchini and tomatoes and onion skewers. And a big salad, too, with oil and vinegar dressing.

It's still warm out, so I wanted to do a light dish for tonight.

I will be cooking cod fish filets, in parchment paper, with thinly sliced shallots, Yukon gold potatoes, Kalamata olives, white wine, fresh herbs and lemon slices. I'll probably serve that with a salad of chopped grape tomatoes with olive oil, finely chopped red onion and capers.

I do not make desserts. We may have a small dish of vanilla ice cream later in the evening.

I bought 2 eggplants this morning, so we'll have eggplant Parm with green salads.

It came out great; got the recipe off the internet. DH loved it. With wild-caught salmon at $14/lb in my area, I decided to go with cod at $6/lb. Have enough left to make my favorite New England style cod and potato corn chowder, with oyster crackers.

Love eggplant parm. Maybe I'll do that later this week.

Since we turned cool for us last night I made a big pot of autumn soup...or as DH calls it "runny hamburger stew"!
It was YUMMY! And from the amount that is left over...looks like we may have that tonight too!

Oh boy, my mouth is watering for these wonderful sounding meals. So many things I like that DH will not eat. . . eggplant parm, pork roasts etc.

I did make two haddock dishes, one a casserole the other a chowder (delish) and also Paula Deen's Bobbies favorite goulash.

After lunch today I will bake DH the blueberry pie he has been yearning for, even though he will be meeting a friend for coffee at a really good bakery . . . oh well he can bring home a loaf of bread!

What do you do with a Harley Davidson ice cube tray husband won as a door prize (along with some other HD goodies)?

Use it for a chocolate mold! Got 8 of these.

KYIS - You've had a busy month!

I was inspired by a recent episode of Cook's Country, and will serve Chicken Fricassee for dinner. The flavors will be worth the time and attention it takes to prepare it.

Wink Not really. But what I'm wanting...really REALLY wanting is a thick steak. I've mentioned it, but husband hasn't offered to grill any yet. I need to grab a couple of t-bones out of the freezer and force him or plan a trip to Texas Roadhouse...or grill them myself. While I'm fully capable of cooking on the grill and did prior to marrying DH 15 years ago, now whenever I head out the door with the charcoal and matches, he takes over. Wink Yes there is a method to my madness...

BTW, when husband asks about the HD chocolates, I'm going to have to ask, "Huh? What HD chocolate?" I'm bad. But I'm good too! It was dark chocolate. Big Grin

Wrapped up the month with a variation on the pot roast recipe Guy Fieri made on his show. It came out really good. I had some left over baked smashed potatoes and I did a yellow squash and zuchinni hash. Miracle of miracles - the local grocery is carrying Whitehouse Rolls!!! YUUMMM
