Anyone have a really good recipe for soft butter yeast rolls? My mother-in-law used to make these since the '40s. She passed away and noone got the recipe. I would love to surprise my father-in-law on his 90th birthday with some similar rolls.

Dang, I hate to be the first to post. Everyone else's recipe will look so good compared to mine. I buy frozen Rhodes rolls. They're better than my homemade. Pastry and breads are my weak spots in cooking.

I'll have to post again tonight or tomorrow because I don't have the recipe at work. Mine is from an old "Taste of Home" cookbook. I believe it's a basic recipe, then list several different ways to shape the dough--pinwheels, cresents, dinner rolls, etc. I make these only once a year at Thanksgiving and everyone waits anxiously for them. They are heaven!!

OK, here's the recipe for "Rich Hot Rolls"
3/4 c. milk 1/2 c. shortening 1/2 c. sugar 1tsp. salt 2pkgs. active dry yeast 1/2 c. lukewarm water (110-115 deg.) 4-1/4 to 4-3/4 c. sifted flour 2 eggs melted butter Scald milk, Combine milk, shortening, sugar & salt in bowl. Cool to lukewarm. Sprinkle yeast on lukewarm water; stir to dissolve. Add 1-1/2 C. flour to milk mixture; beat well by hand or with electric mixer at low speed 1 minute. Beat in eggs and yeast. (I use dough beater w/Mix Master). Gradually stir in enough remaining flour, a little at a time to make a soft dough that leaves the sides of the bowl. Turn onto lightly floured surface; knead until smooth, satiny and no longer sticky, 8 minutes. Place in lightly greased bowl; invert to grease top. Cover and let rise in warm place until doubled, 1 to 1-1/2 hours. Punch down and turn onto lightly floured surface. Divide in half & shape as desired. 4-leaf Clovers: Place 2-inch ball of dough in each greased muffin plan cup. with scissors, cut surface of each ball in half and then across again to make fourths. Brush with melted butter. Pan Rolls: Shape dough in 2-inch balls. Dip in melted butter. Place in greased round layer cake pans. letting balls just touch one another. Usually, I will then cover the pans with a clean dish towel and the dough will rise a little more until I'm ready to put in oven--at 375 deg. 12-15 minutes or til golden brown, Makes about 30 rolls. |
