It is march 1st. At least it's mid afternoon in Italy!! So most of you are just now having breakfast! But we've not only had breakfast but lunch as well and are thinking about dinner What are you dinner plans for this march first -- lion or lamb? Corn-beef, cabbage, taters, carrots and cornbread on St. Patty's Day; that's my only plan so far. Hope to be moved by month's end so we can fire our grill up; they don't allow grills at this condo rental unless we take it wayyyyyyy out in the middle of the common area. | ||||

Linderhof, are you in Rome? Not that I'm jealous or anything. TAKE ME WITH YOU! Ok, I haae chicken legs frying on the stove top as I write. There was a roast at the store but I couldn't remember what kind of roast I was supposed to use so I didn't buy one. Bought chicken legs instead. I'm being daring, though. One pan has just salt on the chicken legs, the other pan has a whole bunch of spices, lemon juice and garlic. Going to see which ones I like the best. Bought some hamburger to make "meat," daughter's name for sloppy joe meat/taco meat. I may make that tonight, too, if the chicken legs are done in time (need to use one of those pans). Trying to do a little cooking in the late evening so it's easy to warm up for tomorrow's meal. | ||||

Charcoalsmom -- we spent two weeks in Italy after doing a transatlantic cruise to get there. Venice, Tuscany and finally Rome! It was wonderful but it is good to be home! Or is it -- mounds of laundry and mail and an empty larder!!! Last night, our first home, I took the easy route and made a frozen Mandarin chicken that DH picked up at TJ's when we went there for our provisioning. Served with brown rice. Tasty but not the food that we had been eating -- both in Italy and on the ship! Martha | ||||

Husband and I went to College Station for his 55th Aggie reunion. We met only with the 5th Group (Corp) - the guys he specifically knew and lived with on campus. On the way we ate at a very good Italian restaurant in Palestine - we've eaten there before. I could do with tea, bread, and the olive oil/balsamic vinegar dip We had Mediterranean chicken that night with the Aggies. Then a side trip to Austin for webpage management training for my job - nothing spectacular eaten there although the possibilities had I been by myself would've been endless! ...so many good and different restaurants. I tried to talk husband into Indian food but he said no because we would smell like curry. I wound up skipping supper altogether so husband went out and found a hamburger. We had a salad with vinaigrette, a Gaida pork chop dish with a fennel, tomato, caper sauce and roasted garlic new potatoes. I've not tried the recipe before but I will make it again -- it was really good. Martha | ||||

Made our special Cashew Scampi over Wild Rice this weekend - always a great treat although it would be better if we lived on the gulf and could get fresh shrimp! Oh, well, have to deal with frozen when you live inland ~ no excuse not to experiment just because you can't get fresh! | ||||

IR -- We were on the Carnival Destiny -- it's last voyage. When it landed it was taken to Genoa where it will be transformed into the Sunshine. It's first sailing as the Sunshine will be mid April as I understand. IR -- I understand what you said about fresh shrimp -- living not only inland but smack in the middle, we always have to buy frozen! Martha | ||||

Rats - the robo moderator ate my post! Over the weekend I made a potato recipe from a back issue of Bon Appetit - Patatas Bravas with Pimenton Sauce. I served it with pan fried fish, broccoli slaw and hush puppies. the sauce is really yummy on the fish. Patatas Bravas with Pimenton Sauce Ingredients •2 tablespoons extra-v irgin olive oil plus more for frying •1 small yellow onion (1/2 cup), chopped •2 garlic cloves, chopped •1 bay leaf •1 tablespoon smoked Spanish paprika (such as Pimentón de La Vera Dulce) •1 tablespoon hot smoked Spanish paprika (such as Pimentón de La Vera Picante) •1 tablespoon all-purpose flour •Kosher salt, freshly ground pepper •2 pounds russet potatoes, peeled, cut into 1-inch cubes | ||||

I'm so envious of you all! I'm sitting here with a badly sprained ankle. Husband would take me out to eat every meal, but with the lack of activity to start with because of the ankle, I can't take in those grease-laden calories. So whatever I can fix quick is what we're getting. Last night was sautéed chicken breasts and purple hull peas. I started to steam some broccoli but asked myself "Why?" A small chicken breast and a spoonful of peas and I was through. This stuff would make cardboard taste good. I must confess - I have the smoked paprika and Papas sweet paprika but no hot so I used both kinds and added a hit of red cayenne pepper to the sauce. Worked great. It wasn't until I was saving the recipe I noticed it was supposed to be blended. :embarassed: But is cooks down there are no large lumps. | ||||

Last night was Spareribs and sauerkraut with mashed potatoes and Haricot verts. I made the spareribs and sauerkraut Saturday night and put it into the fridge so the Spareribs would soak up all the goodness from the sauerkraut, the flavor really permeated the meat with taste and tenderness. | ||||

Our old neighbor, after we had already moved, tripped over the vacuum and broke both elbows. I was like, WHAT? So I made coucous tonight to go with the ready made chicken. "What is that?" Thanks for commiserating with me. I'm using an ace bandage. Do you know that they are sticky now and you don't have to use those clips or a safety pin?! I was like WOW!! That's neat!! Now I'm so tired of it. pfffftttt I overdid it last night. The ankle felt pretty good yesterday evening so I took a pork tenderloin, poked garlic into slits, salt, lots of pepper, wrapped it with bacon then baked it while sweet potatoes were baking. I also roasted some broccoli - which I won't do again because husband really didn't like it. I sat down at every opportunity (which the scales showed this morning that I've been doing for over a week now-arrgggghhhh) but still had an aching ankle and took two ibuprofen to go to bed. We're having leftover chicken, pork, peas, broccoli, sweet potatoes tonight. Sherry -- I guess mine didn't really ache -- it was just swollen. But I know what you mean -- December = Christmas = Food and no exercise!!! Sigh -- NOT a good thing! I did get a good report in January when I went to an ankle doctor -- it was healed and I should have no further worry from it. And with the amount of walking that I did in Italy . . . especially up and over the canals in Venice3 -- I would say it was healed -- and it didn't swell again either! Martha | ||||

Tonight served Sticky Ham Balls, Cheesy Hashed Browns Potato Casserole, Green Beans Estill and Apple Crisp. Not much left of anything with 8 for dinner. I'd portioned some of the batches into freezer for later use. All recipes are so easy, yet it tastes like you've slaved all day - 12:30 to 4 was all the prep time, had to wait over an hour to start baking. | ||||

Of course, I'm willing to share, mamaspoon, but I don't really follow a recipe so will have to wing it ~ it's a dish DH and I have created over time... Cashew Scampi ~ Ingredients needed: one pound of shrimp - thawed and de-shelled (if you have fresh, so much the better!), one pound fresh mushrooms - washed and halved or quartered depending on size, margarine (butter if you prefer), 1/2 pound or one package of grape/cherry tomatoes, a can of SALTED cashews (whole, halves or pieces), one fresh lemon, about a half cup of Brandy and a cup or so of DRY white wine - I like Chablis but any will do as long as it isn't sweet! To go along with the main entree, you will probably want to have a baguette of french bread plus a salad of fresh greens with a simple dressing ~ I'll leave that to you to decide. Oh, and you will also need a package of Uncle Ben's Wild Rice as well ~ I think it is readily available in most grocery stores. Get ready to cook with your largest (and deepest) frying pan on the stove top, toss in the margarine/butter and get it to medium - add some white wine and toss in the shrimp and mushrooms. Turn down and let them cook a bit uncovered but keep stirring. Put the fresh lemon in the microwave for 12-15 seconds, take out, slice in half (it will be VERY juicy ~ just a hint for future cooking) and squeeze half over the contents of the frying pan. Start the Wild Rice (I use the microwave method - I know, not classy but it NEVER burns and comes out perfect every time). When the rice is about 10 minutes from being done, add the tomatoes and HALF of the can of SALTED cashews, stir and cover. About 3 minutes from "finish" - add the Brandy, stir and cover again. The flavors meld together during this time.... You want the mixture to be done, the tomatoes to still be fresh and the cashews still crunchy! Plate Wild Rice first and then cover with the Cashew Scampi mixture next and serve with your choice of bread. If desired, place juice in a gravy boat on table for individual addition to the meal. On your own for dessert but, have to say, Chocolate Mousse and coffee compliments it well!This message has been edited. Last edited by: Idaho Resident, | ||||

I saw a recipe that called for cream of mushroom soup, onion soup mix, water, and I think something else (which now escapes me) so I'll do that tomorrow. I printed the recipe. | ||||

Ummmm - homemade bread - that's on my to-do list for tomorrow's dinner. My ankle is MUCH better. I helped with the Friends of the Library's annual book sale today. But everyone kept after me to sit down. And when I sat down, I was ordered to put my foot up on a box. Tired as all get-out this evening so we went out for Chinese. I'm so not a fan of corned beef. I tried cooking one once and that was enough. I really hate the texture of the meat. Strange think - I really like corned beef hash, especially homemande and corned pork is wonderful. But the beef - yuck. | ||||

We did have the Irish-American traditional corned beef and cabbage. Before church I put carrots, potatoes, onions, and corned beef in the slow cooker. Middle of the afternoon I made shortbread for dessert and Irish Soda Bread. Just before supper, I took some of the broth off the corned beef to use to steam the cabbage. Husband bragged and bragged on all of it. We TRIED to go out yesterday to a little seasonal place near here that is only open during sap season. It's way way out in the hills, a good 2 hours from Buffalo or Rochester. When we got there, there were HUNDREDS of cars, and a line at least 200 people long. NO pancakes at that good..LOL. Anyway we went to a local brunch buffet and had a great time, then today I bought buckwheat pancake mix and a bottle of local real maple syrup. I'll make my own durn "all ya can eat pancake bash." For dinner tonight I made our own Beef on weck, home made, yummmmm Life is GOOD!! | ||||
