Corn Casserole????

Corn Casserole????
A friend made it yesterday,and it turned out like cornbread. While I have never made it, the recipe I have said "it's more like a souffle than anything else." I told her I would send her the recipe I have. Personally, I didn't care for her "cornbread." It was too sweet for me. I don't think her recipe used sour cream, maybe that would be the key ingredient.

I got my recipe at allrecipes.com (Corn Casserole 1, by Polly Woodard). It has 2 eggs, whole-kernel and cream-style corn, butter, sour cream, cheddar cheese, onion, green chilies, and an 8-oz pkg of corn muffin mix.

The one I have doesn't have any corn meal or muffin mix -- it's corn, cream cheese, cheese and some bacon, I think. And perhaps an onion (I don't make it that often -- mostly for company when we grill) I've not had the corn muffin mix type of corn casserole but to me it DOES sound like "cornbread" with additions (and I have done that -- put cheese and onion and chili in my cornbread)

There's corn casseroles, spoonbread, Northern cornbread, Southern cornbread, etc. all a little different.

Mom always made corn souffle, which had eggs and quite a bit of milk and was just llke souffle.

I have that recipe for corn casserole with the muffin mix in it. Good and sets up nicely and holds up well on a buffet or potluck table as it is never watery.

I make my Grandma's recipe for scalloped corn with home frozen sweet corn, cracker crumbs, eggs, bit of flour and sugar, salt & pepper and you can add grated Cheddar to it or on top. It's always gone.

But my ultimate favorite is Marion Cunningham's recipe for Custard Corn Bread. From scratch with cornmeal, milk, eggs. Then when it's ready for oven you pour 1 cup of whipping cream into the mixture and do not stir. I have added frozen kernel corn with nice results and our kids love it, as long as they don't question what it making it so good!

Here's my corn casserole that I make alot and have great reviews:

1 can whole kennel corn
1 can cream style corn
1 8oz Jiffy corn muffin mix
1 cup sour cream
1/2 cup melted butter
1 1/2 cup shredded cheddar
1/2 pound cooked and crumbled bacon..

after cooking the bacon and mixing all ingredients together then bake... yum yum.. now I will be making this one for my beer and bacon party.. to go along with lentil chili with bacon and beer in crock pot...
