I finally got around to trying this recipe from long ago. I loved them. The cookies have a buttery taste. The fruit flavor is very mild - they are nothing like a heavy fruitcake.
Holiday Fruit Bars
HGTV - pearlsgirl, 11/04
Grease and flour 13x9x2 baking dish.
Sprinkle 2 cups chopped pecans in dish.
Combine and spoon over nuts:
1 tsp vanilla extract
1 stick room temp butter
2 room temp eggs
1 cup flour
1 1/2 cup brown sugar
Chop up and sprinkle over batter:
1/2 pound candied cherries, red and green
1/2 pound candied pineapple
Bake at 300 degrees 1 hour. Cool and cut in squares.
I did change a few things. I diced the fruit and then mixed everything together. I baked the cookies in a jelly roll pan at 300º for 35 minutes.
These sound really good!
