The consistency of thawed SC will be poor but in that type of use it would do fine. Just wouldn't look good atop a baked potato for company.

I think you can freeze just about anything; however, you might not get what you expect when it thaws.

I have frozen most dairy products with the exception of sour cream. Sour cream has a long shelf life. If it hasn't been opened it can go weeks beyond the expiration date. If it has been opened it also lasts a long time. You can usually tell it's bad because it starts turning an off color or growing mold.

Once it's open I usually pour off any excess liquid, stir and use it.

After freezing a dairy product just shake or stir well after defrosting and use.

I guess my question is -- why would you want to? I'd rather just buy it as I needed it.

Freezing changes things so much that I rarely freeze anything but meat, nuts, fruits and pesto.

I bought it to make something and then didn't. It's just me so I don't use much of any one thing. I found out I could use greek yogurt instead so I'll use that from now on because I keep that for my smoothies.

I have done the same thing about buying cream or half and half for something specific and then didn't make it for some reason, so rather than throw it out as it was nearing expiration date I threw it in the freezer. Used it later with no difference that I could tell.

I do buy butter when it goes on sale and freeze it.

Sis -- I USUALLY use yogurt instead of sour cream -- even on a baked potato! And like you, I always have yogurt! I rarely buy sour cream!

I'm Polish and grew up in a Polish community. Mass and school was in Polish. In our house there was always sour cream. It was and still is used in mashed potatoes instead of milk or cream, top of pierogis with fried onions, etc. There's always sour cream in my house.

Also, remember that some of us live rural and don't run to the store that often. I freeze LOTS of things to use later for baking.
But as stated by another poster, sour cream will keep for a LONG time, so don't usually freeze that.

I used some of the sour cream and am going to bake my banana bread next week. Finally remembered. If I don't have enough I'll finish with yogurt. I throw so much stuff out because there's no way I can use it and I'm tired of it. It not only is a waste, it's expensive. Thanks for all your replies.
