Hello! I'm interested in LOS post about dieting where you said you were switching from any kind of oil except evoo to bacon grease. Is there a reason for this? I assume if you're going to fry oil is the better way to go. Of course being from the South I do always have bacon grease. Thanks.

Most cooking oils are made from corn, soy & canola...these are mostly GMO'd crops. My Crisco "vegetable" oil is soybean oil. I want to limit my exposure as much as possible to GMO'd products.
I can't afford buying totally organic although I am both growing some of my own veggies and purchasing what is available & affordable as much as possible.
I certainly am not able to afford to buy grass fed/pasture raised in my area as far as meats...they are not readily available here & what is closest is priced sky high! I realize I will still be exposing myself & my DH to some GMOs through feeds that have been fed to the hogs that are used for the lard...but I'm doing what I can.
As soon as we have both time & money...we will finish fencing in our pasture/woodsy area & will purchase goats first to clean out all the weeds & wild black berries...then we will get a couple of hogs & later a calf or two. I have found a place close that still butchers for individuals. We will also be building a chicken house & pen/run...I'm hoping this will be completed this coming spring....so as close as possible for us to organic eggs & chicken if I choose to kill & butcher them myself. I can't find anyone in the area that does chickens. And I've done it before so I do know how to kill & butcher them!

Basically, I'm just trying to get as many chemicals & un-natural things as I can out of our foods.

Judy, being from the south has nothing to do with saving bacon grease. I live in the south now but I was raised in central Ill...on a farm. We always saved & used our bacon grease...waste not, want not!
If you haven't been using it to fry eggs or hash browns/potatoes...try it! The taste is soooo much better! And we all do need some oil/grease/fats in our diets for all our innards to work properly.

Thanks Karen! I guess I've missed something, what is GMO? Also I have no problem using bacon grease-for eggs, fried potatoes, etc. I have true Southern blood.

Genetically modified.

I did learn something yesterday about GMO -- wheat isn't. It's too complicated a plant to be GMO so new strains are done the old fashioned wait -- so eat bread and pasta!

Yes. I've seen things like that but there are few things that are really the same as they were in the 40s, 50s and 60s. LOTS are GMO but others are just hybridized. That's what they've done with wheat -- so it isn't the same but it isn't GMO.

You can still find old apple trees, old roses and perennials and often if you can find farmer's who save their seeds instead of buying new, you can find old vegetables but so many have been changed so much because we want bigger and better.

It's important to realize that MDs who write books with an aim toward the best seller list will never be seen as credible as those who write for peer-reviewed medical journals. PubMed's files contain no articles written by any William Davis. If he's such an expert on the "poison" of wheat, that seems strange. Leads me to conclude the book he's pitching now is anecdotal opinion.

GMO wheat isn't currently grown anywhere in the world as crop for consumption. However it can be genetically modified using transgenic methods. this is a link to to a story about anti-GM protest attempting to destroy genetically modified wheat being grown in a field in in Hertfordshire in the U.K. as a test crop.

I like this diagram because it shows how crops can be genetically engineered using genes from close relatives plants and genetically modified using genes from other organisms.
