I really could use some good lunch suggestions for bringing my lunch to work. I have to admit I'm not doing very well with brown bagging it now that the weather is getting nice. With Gas prices they way they are I need to start bringing my lunch and just sitting in my car to get away from the office. (I work in a 2 person office and sitting at my desk to eat drives me nuts!) I have access to a fridge and microwave, but I need to keep it interesting, cheap, yet good. I have soup and ravioli in my desk drawer..BORING! lunchmeat sandwiches aren't my favorite either...anyone have suggestions?
I bring my lunch every day as well (nothing but fast food close by my office and I can't be bothered driving further to get non-fast food) I usually just bring leftovers though. Whatever I had for dinner the night before I pack up for the next day. That probably doesn't help you though....
Leftovers make for great lunches. With a microwave and refrigerator on hand, keeping leftovers fresh is no problem. Most leftovers taste better the second time around.
A bowl of salad. A thermos of hot soup. Fresh fruit or fruit salad. Carrots, celery, or other veggies and dip. Tuna salad, egg salad, chicken salad do not have to be sandwiches. Eat with crackers! Tortilla wraps and pitas make for a tasty alternative to traditional sandwich breads.
Just about any left over meat can be made into a sandwitch spread if you can grind up the meat. Grind the meat with some onion, add salt and pepper and, depending on the meat some sweet or dill pickle. Add enough mayo to make it "spreadable". Use different kinds of bread,ie. white, rye, pumpernickle ect to make your sandwitch. Add some lettuce or other "crunchy(sp)" stuff to the sandwitch. What I used to do is, on the weekends,is make some of the above spreads, but also make small recipies of things like chilly(sp) or other one dish meals and take them to work with me.( I also had a place that I could heat things up in.) Salads were also something that I would make and take, (just kept the dressing seperate so the salad did not get soggy) At one time on one of my jobs we had the same type of thing that you have(microwave ect). What we did(3 person office) was to take turns making "lunch" dishes that could be heated up in the microwave. But we all agreed that we needed some "alone time" during the working day, so we would pack the food in individual servings and heat them up at different times, and have the "away time" we each needed.Maybe you could do something like that. But have to tell you that, at the time I did this, I worked in a Doctors office where, both the myself(nurse), secratery(sp) and Doctor so we could arrange that type of schedual.
