DH and I went shopping for dinner tonight. I thought we would do steaks on the grill until I saw they were $11.99/lb. YIKES. So we decided to have lobster instead! They were on sale for $3.99/lb. how could you resist that! I also made an old time family recipe of "Chowder" stuffed clams. They take time to make, but so worth the wait. It's like having clam chowder stuffed in a clam shell. Here's the recipe if anyone is interested.

You need very large Quohog clams (I did 12 since that's all the store had.)
carrots, celery, onion, parsley S&P

Shuck the clams over a bowl reserving the liquid. DO NOT BREAK SHELLS APART. Keep them hinged. Chop the clams into small pieces & drain most of the liquid off.

Dice carrots, celery, & onion into small dice. Try to keep the pieces uniform. I would estimate 2 cups of each and a handful of parsley chopped.

Combine clams and veggies. Add 2 (maybe 3) eggs, and about 1 cup of bread crumbs. Enough to bind mixture. S&P. *use quite a bit of salt.

Now stuff the shells-leave a little room as the veggies expand when cooked. Close the shell tight and wrap tightly and tie with string. This is definately a 2 person job.

Place in pot standing upright, and put in about an inch of water.(this is where I add back some of the clam juice) Cover pot and steam clams for about 1/2 hr. on a slow simmer.

Serve from the pot.

If you have any extra mixture you can just bake it off in the oven in a sprayed & covered casserole dish.

Jo, that sounds so good. Wish I would have been there. I had mock city chicken, boiled new redskin potatos and fresh corn. Sliced fresh peaches and cookies for desert. Waiting till bed time to have that.

That sounds good -- we never get lobster at $3.99 pound (nor do we get steak at $3.99 pound -- LOL!) Sigh -- but there isn't much "wild" lobster on the prairie!

It's still triple digits and DH is in the last few days of his diet challenge so we had a Mexican salad with grilled chicken.

I'd trade that for a lobster any day!

We had grilled burgers with all the fixin's & fresh corn on the cob.

Last night I had a crowd for Asian Chicken Salad, fruit, veggies & fresh peach dumplings for dessert.

REALLY? Lobster for 3.99 a pound??? Wow, it's more like $29.99 here and THAT is IF you can find it - jealous here. I'll trade you some sirloins, T-Bones and even some filets for those! Wink

Tonight's menu? Chilled Shrimp - boiled and shelled - served with mayonnaise (HAS to be Best Foods or Hellmans if you are east of the rockies), alfredo fettucine, sliced avocado and broiled tomatoes topped with Parmesean cheese! Luscious! Strawberry shortcake for dessert - cool dinner for a hot night! Cool

PS. I WANT some of that lobster at $3.99 a pound - where do I have to move??? Big Grin

We had ribs last night and tonight because I prepared our traditional Breakfast at Wimbledon (one of the few times a year I cook breakfast) we're having sandwiches tonight.

We have a houseful of family right now and it feels like all I'm doing is cooking and clearing dishes.

Idaho-I'm here in SW Connecticut on the Long Island Shore. Trust me, we never ever see lobsters at that price. The lowest they go is $4.99-$7.99. July is usually the month to buy. I think they are molting then. Like I said, we were in the mood for steaks but $11.99 is crazy. The price of beef has skyrocketed here. Ground Chuck is anywhere from $3-4/lb.

Our last night before DH's weigh in tomorrow morning -- a chicken less Mexican salad (sans tortilla chips) just lots of lettuce, tomatoes, hot peppers and a spicy dressing!

Sigh!

At least tomorrow we'll have a normal dinner of meat and vegetables. I can hardly wait!

We're still dieting -- we've still got weight to lose but it will be "normal"!

I've got my fingers crossed that DH will win -- he's worked hard and has lost 50 pounds in the two months.

Martha - HURRAY! Y'all keep up the good work!!!

Hubs is out of town. I debated and debated and finally grabbed the keys and drove 40 miles for Olive Garden. Sigh. Capellini del Mare with enough in the takeout box for tomorrow's lunch. Pretty pricey meal by the time you figure in the fuel...

We're back on a "normal" diet for DH's Diet Challenge is over!!!! So I'm cooking again -- Tonight -- we had scallops with beurre blanc on top of a bed of sautéed Farmer's Market leeks.

Dinner tonight was grilled turkey burgers on a bun with big slices of raw onion and fresh tomato, a salad of greens with cucumber and onion, and leftover corn pesto pasta.

Tonight's dinner? Open-faced hot roast beef and mashed potatoes with gravy served over bread - yes - a throw back to a "truck-stop" meal that my DH loves to have every now and then! Now, I've not saying that it is particularly healthy (although it has all the basics) BUT, boy, is it good! Yummy

And simple to make - my "last-minute" meal that everyone loves! Just need some roast beef from the deli, a packet of brown gravy and Idahoan instant mashed potatoes - yes, the kind from a box even though I am 6th generation Idaho native! Big Grin

Directions? Make potatoes using microwave directions from box (I add in sour cream), make gravy from the packet mix on stove top while arranging bread and beef on plate, add gravy on top of all and heat in microwave about a minute or so. Presto - instant meal that will get raves and leave the plate clean!

I like it just as it is but DH like a little "spice" via Chipotle sauce. Takes 15 minutes from beginning to eating! I know, not really cooking, but these hot days, who wants to heat up the kitchen? This one works... Cool

ETA - Yes, I DO know how to cook but, sometimes, it's fun to just make food that tastes good without worrying about anything else! Smile

All your dinners sound so good! We are going to a wedding tonight so I hope our dinner will be tasty! I did make up a big batch of french toast this morning for the family crowd that is here. That's the last cooking for me for today! Woo Hoo!
