Going to a ladies night tomorrow evening. It will be outside on the deck and the weather will be the high 80's-90.
I offered to bring something. Now I'm in a quandary because of the heat. Hostess having fruit pizza, chips and dip as well as hummus and crackers.
A bowl of strawberries with the hulls still on would be beautiful. Or some cherry tomatoes, or carrot and celery sticks. Or a simple cookie without frosting or chocolate that could melt. Maybe something like gingersnaps, or snickerdoodles.
Bing cherries or green grapes (or both) in a pretty bowl filled with cracked ice!
Thanks cocok and IR.
Would you still bring fruit when she's having a fruit pizza?
Here's a winner of a recipe -- should stand up to heat okay and is different.
6 large vine ripened tomatoes, diced
1 small red onion, diced
2 oz. Feta cheese, crumbled
1 small jar Kalamata olives, sliced
1 small bunch cilantro, chopped
2 cloves garlic, minced
salt and pepper to taste
Mix all the ingredients except corn chips. Serve at room temperature with corn chips for dipping.
PS -- I couldn't find the good olives so I just used sliced black ones. Was still good!
And here's another one that's really seasonal --
Layered BLT Dip
8 ounces cream cheese
1/2 cup Mayonnaise
1/4 cup grated Parmesan cheese
Salt And Pepper
1 1/2 cups shredded lettuce (Romaine or iceburg)
8 slices bacon, cooked and crumbled
1 large tomato, chopped
2 green onions, sliced
crackers or sliced baguette for serving
Beat together the cream cheese, mayo, and parmesan cheese until smooth. Add salt and pepper to taste.
Spread the cheese mixture in the bottom of a 9 inch pie plate.
Top the cheese with the lettuce, then the cooked bacon, chopped tomatoes and finally, the green onions.
Chill until ready to serve. Serve with assorted crackers or sliced french bread or wheat thins.
