Been overcast and grey the last few days so I was in the mood for some comfort food ~ splurged and bought some deli medium-rare roast beef and made truckstop-style open-faced hot beef sandwiches with brown gravy and mashed potatoes last night.

Was going to do the same tonite to finish the beef when I saw a TV commercial advertising French Dip sandwiches with choice of cheese ~ couldn't resist! DH had cheddar and beef and I had blended white cheese and beef - both with Au Jus of course. Yummy

Back to green salads, vegetables and fish for the rest of the weekend..... Cool

Tried out my new crockpot last night. I made stufed peppers. Ohhhhhhhhhh so yummy.

I use regular green peppers, 85/15 ground beef, plain white rice and tomato. I mix the meat with seasoned salt, garlic and onion powder and rice. Pack into the peppers, place in crockpot with about a can of crushed tomatoes and a half cup of water. cook on low for 5 hours. perfect every time.

I NEVER precook ground beef when I use it in the crockpot and it always turns out delicious.


Life is GOOD!!

Pork, onions, cabbage, potatoes, carrots cooked in a cast-iron casserole in oven - sprinkled with peas at the end. Delicious - and lots left over.

Seaborne, you had me slurping until the end...not a fan of peas. (I used to slip those to our dog who sat next to me at the dinner table when I was young.) Mom caught me once. Smile
