A favorite from my childhood was long simmered fresh green beans with new potatoes and cooked with bacon or a ham hock or two.
I updated this family favorite by roasting the beans and potatoes in the oven (sprinkled with ONE piece of bacon, chopped) with a sprinkle of olive oil, salt and pepper and a goodly amount of fresh rosemary.
Instead of totally roasting, I did cover the sheet pan with aluminum foil .
They were lighter than the normal version but had as much flavor IMO as the original. Both DH and I loved the additional flavor of rosemary!
I still cook fresh green beans with a good bit of smoked jowl bacon with new potatoes. Also will have fresh corn on the cob. slicked cukes and onions in vinegar and salt water, green onions, sliced tomatoes and corn bread..that is our summer garden meal and we love it. We don't have it as often as years past but we still enjoy it.

Mine were not cooked to death for I roasted them only long enough to cook the potatoes so therefore they were not mushy -- which is why it is "updated"!

I didn't mean your recipe was mushy but where I reside, this is the consistency it is served.
