I got some very thin sliced pork roast at the local deli for sandwiches and it's really good. The problem I'm having is that I don't know what condiments to use because w/o something on it, it's a little dry. So what would you use? TIA
Though most often used with turkey, consider making cranberry mayonnaise. Do a google search for recipes and variations. Optionally, a search for garlic mayonnaise recipes or herb mayonnaise recipes may appeal to your taste buds. Garlic works well with pork as does rosemary and sage.

You can use mustard and mayo as a base for spreads. Think cranberry mustard (cranberry sauce (canned whole berry) and Dijon), basil or pesto mayonnaise (basil or pesto and mayo), orange marmalade mustard, cherry mustard, etc. I usually do them half/half but you can add and taste until it is to your satisfaction.
