I make these not only for Christmas but all through the year -- you can make them soft or roll them thinner and make them hard. They're a good cookie!

Here is my first batch!

Martha

LINDERHOF CUT OUT COOKIES

1 cup butter, at room temperature
1 1/2 c. sugar
3 eggs
1 T. vanilla
1 t. almond flavoring
4 c. flour
1 t. baking powder
1/2 t. salt

Cream butter and sugar until light. Add eggs, one at a time, then add flavorings. Mix flour, baking powder and salt together and then add. Mix until dough comes together. Flatten into a disc, wrap in plastic wrap and chill for at least 30 minutes.

Roll to your desired thickness (depending if you like a soft or a crisp cookie) and bake until firm to the touch.

Cool on wire racks.

This is the recipe I use. I would not call it buttery but I like the taste.

2c.sugar
1c.butter - cream together
1c. sour cream
1 tsp. soda - combine and then add
1 tsp. vanilla
3 eggs - add
1 tsp. baking powder
5-6 c. flour - add. Chill a bit before rolling
Bake 350 for about 10 min.

This makes a lot so I usually freeze half of it for rolling later.

Martha, I like your recipe with the almond flavoring. I will have to try it.

Yesterday, my two DDs and I did another year of cookie baking. I do the double batter recipe for the pressed cookies, the youngest does the double batter recipe for the Walnuts Balls, and the oldest does the double batter recipe for the cut-outs. Again, she insists on using Crisco for her favorite cut-outs recipe, and it was another futile attempt on my part to suggest she use at least half butter and half Crisco (her recipe uses 2/3 c of Crisco).

I notice that Martha and Metwo both use butter in their recipes, which IMHO makes such a better-tasting cookie. My daughter's cookies taste like cardboard to me. It's my least favorite cookie! I would make a butter batch for myself if it wasn't so much work and I really don't need any more cookies!

Metwo, I make some from a recipe that has sour cream too! It's been in DH's family for several generations. The cookies remain soft and are not hard like those from most recipes. I make them year round.
