DH has requested his late mom's graham cracker cake for his BD this year. I have the cake recipe and the one for the fluffy white icing she frosted the sides with. She'd spread a nut filling on the tops of each layer, and it's that recipe I need help to locate.
The filling was simple, nothing complex. I'm thinking it may have had a cooked cornstarch and liquid base flavored with something - maybe just vanilla, or maybe some kind of juice. The bulk of it was a large amount of chopped pecans. It probably dates back to around 1940 but could be as late as the early '50s. She owned a Better Homes and Gardens cookbook from the time she married in 1941. The recipe may have been from that book, not sure.
The filling isn't anything like the one for German chocolate cake; it doesn't have coconut, butter (or not much, anyway), or egg yolk (but it may have yolk, again not sure).
So, please... Have you any ideas?
I have a can of Solo brand Pecan filling which sounds like what you describe. They only offer their almond version on the website. However, their Baker brand lists a nut filling with almond, cashew and pecan pieces.This message has been edited. Last edited by: Lurah,
This recipe has a cream filling. If it sounds right, you can just add the chopped pecans. And it IS Better Homes & Gardens!
