Making Cajun Chicken Alfredo. Recipes calls for marinated sun dried tomatoes. I have marinated roasted peppers. Could I use these instead?

I have regular plum tomatoes. Would you include some of them in the dish?

You could roast your plum tomatoes and then marinate them for a little while. Cut them in thirds or fourths lengthwise, lie flat on a sheet pan drizzle with olive oil and salt and pepper. Roast at 275 degrees for about 45 minutes. If after the roasting you want to marinate them, you could use a little bit of your favorite Italian Salad Dressing. The roasting really intensifies the flavors in the tomato.

Yes you can substitute the peppers. HOWEVER, the taste will be different.

SR: what a good idea. So, would you include the roasted peppers (they are mixed w garlic cloves and olv oil) from the jar? Or just use the roasted tomatoes?

FFG: I was just wondering if I used the jarred roasted peppers if I should add the roma tomatoes too?

I thought the jar of roasted peppers were roasted tomatoes when I bought them.

If I just do my own roasted tomatoes, what can I use the marinated roasted peppers for?

Pasta, potato salad, quesadillas, as part of hummus. I've got some chicken recipes that call for them also. Any kind of stir fry.
