DELICIOUS pie I made tonight.

While DH and I were in Arkansas just a couple weeks after Branson COF, I had a slice of Ozark Mountain Pie. OH MY! The recipe was a restaurant secret...but my goodness how can you go wrong with coconut, chocolate chips, and walnuts? I just don't know what to name my version...

How about: "Does this make my butt look big?" LOL

The quilts are lovely. The kids will love them.

But I am distracted by that PIE! Right now I think you should call it "Sherry is a big tease" pie! LOL! But "To Die for Pie" has a nice ring to it too. Wink

I'm home.

Sherry's So Good It Does Not Need a Name Pie Wink

1/4 cup butter, softened
2/3 cup sugar
1/2 cup Karo
1 teaspoon vanilla
3 eggs
1 cup chocolate chips
1 cup coconut
1 cup walnuts, chopped

Preheat oven to 350 degrees. Cream butter and sugar. Add Karo and vanilla, mix in. Then add eggs and beat until all is blended in. Stir in chocolate chips, coconut, and walnuts. Pour into a prepared pie shell. Bake 40-45 minutes.

Note: I used dark chocolate chips, but you can use milk chocolate chips if you prefer.

My new crust recipe. When I got my new KitchenAide food processor last year I searched for a pastry crust recipe. So flaky it melts in your mouth!

1 1/2 cups flour
1/2 teaspoon salt
Pulse a couple of times to mix.

8 tablespoons of lard (I weigh it - 4 ounces)
Cut into chunks and spread on top of flour. Pulse 3 times counting to 3 each time.

Run and sprinkle in three tablespoons of ice cold water. This comes together real quick. Turn off. Gather up into a bundle. Wrap in plastic wrap and chill at least an hour.

Note:
You can use shortening instead of lard. Some of the fat can be butter, but butter tends to toughen the crust.

(I made the mistake of reading the recipe out loud once while DH was talking to me in the kitchen. Pulse 3 times at 3 seconds each. He let me know real quick that counting to 3 was not 3 seconds. I told him this wasn't rocket science...)

I took a slice to Da Judge this morning. She ate it mid-morning with a cup of coffee and bragged on it. This evening while DH and I were finishing supper he asked if I took the pie to work. I looked at him and told him that I took Da Judge a slice but that every time he walked through the kitchen to his office and out of it today - he passed by the pie on the kitchen island. knock-knock...anybody home. LOL He looked funny but did say that he had spent most of the day outside.

Sherry -- just a little nit here. For that pie crust, you use 1 1/2 cups flour and a 1/2 teaspoon of flour????? What might that second ingredient actually be, huh? I might just want to try this and wouldn't want to waste a morsel of these wonderful ingredients.

Is that light or dark Karo in that thar Big Butt Pie? Confused

I have coconut & choc chips "leftover" from cookie baking. Hate it when that happens, but a pie like this could solve that. IF I hadn't burned up my food processor motor making quiche crust. Cry Not sure I could "sprinkle while I run" without a food processor...how much should I drink first? Wink
