I like the current layout...it defines the working area of the kitchen and you have a nice un-interrupted sweep of counter space there with the penninsula courner.
If you changed to an island you might have the expense of reconfiguring your lighting as well..and I suppose replacing counter tops?
Your kitchen is the very common shape and works well for many, but when I redesign kitchens, I always opt for an island for openess, function and traffic flow. Since you are replacing the floor, this might not be an issue, but you should check on local codes...they might require electric in the island (the safety factor). I agree with the suggestion of putting lighting (pendants) over the island. Hope this helps!
