I am thinking of tiling an area which now has laminate countertop material on it.
Is there anything I need to do to the surface before applying the thinset?

Kay,

Which thinset do you have in mind? Not all are rated for over laminate. Proper preparation is important as Bud said. However, I have found that most laminate counter tops are too flimsy and not attached well to the base cabinets. Often I can raise the tops by giving it a good yank. Also check the area at the inside corner, lots of times that area is loose.

If you want the project to last you should removed all that and install plywood with cement board over. Often the base cabinets need reinforcing too.

I'm also considering tiling over laminate backsplash in our old house. Ours is adhered to drywall with contact cement and also those ugly metal strips that enclosed the seams as well as where the backsplash meets the countertop. My question is what would I have to to regarding the metal strips? The ones at the seams protrude very slightly from the wall. The larger ones are in the wall corners and between backsplash and counter.
