I don't really have any ideas, however being a nurse myself one the things I really enjoyed was gift cards to a restaurant, or to have my nails done or just simply a small bedding plant. I have received many items such as angel pins, scarfs, jewelry, etc.

Jamie Mills-Price has a cute little nurse angel pattern that you can make either as a pin or, an ornament size, I think. I have made the pin size ones for boutiques and they went over well.
Valhalla sells the cut outs for both sizes. You may not have time to receive them and get them painted though.
You might be able to order the pattern in e-pattern format and a rush delivery of the wood.
